Our Cheddar Stuffed Meatloaf is always a hit but sometimes we crave a more traditional meatloaf and mashed potatoes dinner. This easy meatloaf recipe doesn’t even require any sauce. It turns out perfectly juicy and flavorful.

Grilled Meatloaf Ingredients:

  • Ground Beef ~ 70/30
  • Diced Onions
  • Eggs
  • Steak Rub ~ Brown Sugar, Granulated Garlic, Chili Powder, Dried Thyme, Kosher Salt, Black Pepper, Smoked Paprika

How to Make Grilled Meatloaf:

  • In a large bowl combine ground beef, diced onions, beaten eggs and steak rub. Mix together with clean hands until thoroughly combined.

  • Form into a loaf.
  • Make a foil pan out of a double layer of heavy duty foil with a rim around the edge. 
  • Place the meatloaf on the foil and place on a grill pan. The foil will catch the juices from the meatloaf and help it to stay juicy.

  • Cook over indirect fire on a 350° grill with the lid closed for about 35 – 40 minutes.

  • Continue to cook until internal temperature reaches 165° using a digital thermometer.

  • Remove from grill and allow to rest 10 minutes.

  • Move to a serving platter. Slice and serve.

How to Store and Reheat:

  • Store leftover meatloaf in an airtight container in the refrigerator up to 3 days.
  • Reheat slices in a skillet coated in olive oil over medium heat for about 2 minutes per side.

Ingredients

  • 1 pound ground beef 70/30
  • ¾ cup diced onion
  • 1 large egg
  • ¼ cup steak rub

Instructions

  • Prepare a grill fire to about 350° using hickory or pecan for smoke flavor.
  • Mix the ground beef, dicd onion, egg and steak rub together in a bowl using your hands or a wooden spoon.
  • Shape into a loaf.
  • Make a foil pan out of 2 layers of heavy duty aluminum foil with a rim around the edge.
  • Place meatloaf on the foil and place foil onto a grill pan.
  • Cook over indirect fire with the grill closed for about 35- 45 minutes. Cook until meatloaf reaches 165° with a digital meat thermometer.
  • Remove from grill, rest 10 minutes.
  • Transfer to a serving platter. Slice and serve.

Notes
