  • Rotel Tomatoes
  • Green Chiles

  • Taco Seasoning

  • Cilantro, optional garnish

Step-By-Step Directions for Tater Tot Casserole

  1. Chop smoked brisket into bite-sized pieces.
  2. In a bowl, combine Rotel tomatoes, green chiles, sour cream and taco seasoning.

  1. Pour into a cast iron skillet.
  2. Top with beans, brisket and cheese. Add a layer of tater tots and brush with olive oil.

  1. Place the skillet on a hot grill. Cook with the grill closed for 45 minutes.
  2. Sprinkle tater tots with cheese and continue to cook until the cheese is melted.

  • Reheat: Place casserole in an oven safe dish and cover with aluminum foil. Cook at 350° 12- 15 minutes or until heated through.

Ingredients

  • 1 pound smoked brisket chopped
  • 10 ounce can Rotel Tomatoes with green chiles
  • 4 ounce can green chiles
  • ½ cup sour cream plus more for serving
  • ¼ cup taco seasoning
  • 2 cups shredded cheddar cheese divided
  • 28 ounce frozen tater tots
  • 1 tablespoon olive oil
  • 1 tablespoon chopped cilantro optional garnish
  • ½ cup diced tomatoes optional garnish

Instructions

  • Prepare a grill fire to 350°. We are using a pellet grill with hickory pellets.
  • In a bowl, combine Rotel tomatoes, green chiles, sour cream and taco seasoning.
  • Pour into a cast iron skillet.
  • Top with beans, brisket and cheese. Add a layer of tater tots and brush with olive oil.
  • Place the skillet on a hot grill. Cook with the grill closed for 45 minutes.
