- Rotel Tomatoes

Step-By-Step Directions for Tater Tot Casserole
- Chop smoked brisket into bite-sized pieces.
- In a bowl, combine Rotel tomatoes, green chiles, sour cream and taco seasoning.
- Pour into a cast iron skillet.
- Top with beans, brisket and cheese. Add a layer of tater tots and brush with olive oil.
- Place the skillet on a hot grill. Cook with the grill closed for 45 minutes.
- Sprinkle tater tots with cheese and continue to cook until the cheese is melted.
- Remove from grill and garnish with diced tomatoes and cilantro if desired.
- Serve immediately with sour cream if desired.

Ingredients
- 1 pound smoked brisket, chopped
- 10 ounce can Rotel Tomatoes with green chiles
- 4 ounce can green chiles
- 1/2 cup sour cream plus more for serving
- 1/4 cup taco seasoning
- 2 cups shredded cheddar cheese, divided
- 28 ounce frozen tater tots
- 1 tablespoon olive oil
- 1 tablespoon chopped cilantro, optional garnish
- 1/2 cup diced tomatoes, optional garnish
Instructions
- Prepare a grill fire to 350°. We are using a pellet grill with hickory pellets.
- In a bowl, combine Rotel tomatoes, green chiles, sour cream and taco seasoning.
- Pour into a cast iron skillet.
- Top with beans, brisket and cheese. Add a layer of tater tots and brush with olive oil.
