This tenderized round steak is marinated and quickly grilled for the most flavor. We like to serve it with a quick onion gravy over baked potatoes or mashed potatoes.

Ingredients Needed for Cube Steak and Gravy Recipe

  • Cube Steak – Tenderized round steak
  • Worcestershire Sauce
  • Apple Cider Vinegar
  • Olive Oil
  • Hot Sauce – We like Louisiana Hot Sauce
  • Spicy Brown Mustard or Dijon Mustard
  • Steak Rub – or your favorite all purpose grilling seasoning
  • Kosher Salt

For the Gravy

  • Bacon Grease or Butter
  • Onion
  • All Purpose Flour
  • Broth – Beef broth or chicken broth
  • Worcestershire Sauce
  • Kosher Salt
  • Fresh Ground Pepper

For Serving

  • Baked Potatoes or Mashed Potatoes
  • Butter
  • Fresh Parsley

Step-By-Step Directions for Cube Steak and Gravy

Making marinade for round steak.
  1. Remove cube steak from packaging and pat dry with paper towels, place in a zip to bag or casserole dish.
  2. Make the Marinade: In a bowl, whisk together Worcestershire sauce, apple cider vinegar, olive oil, hot sauce, brown mustard, steak rub and salt.
  3. Pour the marinade over the steak, turning to coat well. Cover with plastic wrap and refrigerate at least one hour up to 4 hours.

  1. Make the Baked Potatoes: About an hour before serving, cook baked potatoes on the grill or oven.

  1. Grill the Steak: Prepare a grill fire using hickory or oak chunks for smoke flavor.
  2. Remove steak from marinade and place onto a hot grill over indirect fire. Cook with the grill closed for 5 minutes.

  1. Flip the steak and continue to cook until steak reaches 140° using a digital meat thermometer. Remove from grill.
  2. Place steak on a cutting board and cover with foil.

  1. Make the Gravy: Place bacon grease or butter into a large cast iron skillet. When hot, add the onions, cooking 2 minutes. Stir in the flour and continue cooking until golden brown.
  2. Add beef broth and Worcestershire sauce, whisking until thickened. Season with salt and pepper.

  1. Slice the Steak: Using a sharp knife, cut the steak into 1/4 inch strips.

  1. For Serving: Split baked potatoes in half and flatten on a plate. Butter the potatoes and top with strips of steak.
  2. Pour onion gravy over the the steak and potato. Garnish with parsley and serve immediately.

  • 3 pounds cube steak – tenderized round steak
  • ¼ cup Worcestershire Sauce
  • ¼ cup apple cider vinegar
  • ¼ cup olive oi

  • ¾ cup bacon grease or butter

  • 1 cup all purpose flour
  • 2 cups beef broth
