Grilled Zucchini is always a favorite for summer and we just can't get enough of this easy recipe.
These pellet grill zucchini ranch spears are so simple to make and will complete any meal on the grill. They are very flavorful and so good that we've been making them at least once a week.
Ingredients Needed
- Zucchini - small to medium size.
- Olive Oil
- Ranch Dressing Mix
- Fresh Ground Pepper
- Fresh Cilantro or Parsley
Step By Step Directions
Wash and dry the zucchini. Trim the ends.
Cut each zucchini in half and lengthwise and then again crosswise. Slice each piece into wedges.
Place onto a rimmed baking sheet.
Drizzle with olive oil and sprinkle with ranch dressing mix and fresh ground pepper.
Toss to coat evenly. Spread into a single layer.
Cook on a pellet grill or oven for 15- 20 minutes or until desired doneness is reached. We like ours more on the firm side, you can test with a fork to see how tender the spears are.
Remove from grill and garnish with chopped cilantro.
How to Store and Reheat
Store zucchini in an airtight container in the refrigerator up to 4 days.
Reheat in a skillet lightly coated with olive oil over medium heat, stirring occasionally until heated through.
