Chips and dip is always a favorite appetizer for cookouts and we love this Chunky Salsa made with grilled vegetables. We have to say that this Salsa Fresca or Pico de Gallo is just as delicious.

If you have garden fresh produce or make a trip to the farmers market, this easy fresh salsa is a must-try. It has so much flavor with just a few fresh ingredients.

Ingredients Needed

  • Fresh Tomatoes: Cherry tomatoes, Roma, heirloom tomatoes, use whatever you have on hand.
  • Red Onion: Sweet onions or green onions will work too.
  • Jalapeño: Any chiles that you prefer will work. If you don’t like any kind of heat, use bell peppers.
  • Minced Garlic
  • Fresh Lime Juice: Lemon juice works too.
  • Kosher Salt
  • Fresh Ground Pepper
  • Cilantro: This is optional, skip it if you are in the group of folks that get the soapy taste from cilantro.

Step By Step Directions

Dice the tomatoes, discard excess juice if you are using heirloom tomatoes or a slicing tomato variety.

Dice onions and finely dice the jalapeño, removing seeds and membranes.

Add tomatoes, onion, jalapeño, and garlic to a bowl.

Squeeze the juice of a lime over the top and season with salt and pepper. Add cilantro if using.

Mix well.

Serve immediately with tortilla chips or as a topping for your favorite meals on the grill.

Store salsa fresca in an airtight container in the refrigerator up to 2 days.

Ingredients

  • 1 ½ cups diced tomatoes
  • ¾ cup diced red onion
  • ½ jalapeño seeds removed and diced (more if you like it spicy)
  • 2 garlic cloves minced
  • Juice of 1 lime
