BBQ Spam and Pineapple Kabobs

Kabobs are always a crowd favorite and a great way to get the kids to the dinner table. Serve kabobs with grilled corn on the cob and smoked mac and cheese for a hearty and delicious meal.

Ingredients for BBQ Spam and Pineapple Kabobs:

How to Grill BBQ Spam and Pineapple Kabobs:

  • Cut spam into about 1 1/2 chunks.

  • If you are using a fresh pineapple, cut away the ends and the outer peel.

  • Cut into 1 1/2 inch chunks, discard the core. 

Spam and pineapple skewers

  • Thread spam and pineapple alternately onto skewers. If you are using bamboo skewers, it’s a good idea to soak them in water for about 10 minutes. If you forget, a layer of aluminum foil between the sticks and the grill grate will keep them from burning.

  • Spoon bbq sauce over the spam and pineapple.

  • Grill over indirect fire with the grill closed for about 15 minutes or until edges of spam start to brown and pineapple starts to caramelize. grilled spam kabobs with pineapple and bbq sauce
  • Use a digital meat thermometer to check spam is heated to at least 145°.

  • Remove from grill and serve immediately with bbq sauce for dipping.

How to Store and Reheat:

Store leftover kabobs wrapped in foil or remove from skewers and place in an airtight container. Keep refrigerated up to 4 days. 

Reheat spam and pineapple in a skillet with additional bbq sauce and 1 tablespoon of water over medium heat, stirring often until heated through.

Can You Freeze Pineapple?

If you are using a fresh pineapple and have leftover chunks, you can freeze them in a freezer bag or vacuum seal bag for up to 3 months. Thaw and use for grilling recipes or use the frozen chunks to make frosted pineapple lemonade

Instructions

  • Prepare a grill fire to about 350°. Hickory or pecan chunks will add smoke flavor.
  • Soak bamboo skewers in water for 10 minutes.
  • Cut spam into 1 1/2 inch chunks
  • Cut ends and outer peel from pineapple. Cut into 1 1/2 inch chunks and discard the core.
  • Thread onto skewers.
  • Brush or spoon bbq sauce over spam and pineapple.
  • Place skewers over indirect fire. If you didn't soak bamboo skewers, place a piece of foil under the sticks to prevent burning.
  • Cook kabobs with the grill lid closed about 15 minutes or until pineapple starts to caramelize and spam reaches an internal temperature of 145° using a digital meat thermometer.
  • Remove to a serving platter and serve with additional bbq sauce for dipping.

Notes

Store leftover kabobs wrapped in foil or remove from skewers and place in an airtight container. Refrigerate up to 4 days.
Reheat spam and pineapple in a skillet with additional bbq sauce and one tablespoon of water. Cook over medium heat, stirring until heated through.
