Sausage Stuffed Zucchini
Sausage Stuffed Zucchini is a great dish to make on the grill using fresh summer zucchini! Zucchini cups are filled with a delicious blend of sausage, onions and cheese for one of the most delicious summer meals!
We planted zucchini in our garden this year for the first time and are getting a great crop. We have been making ranch zucchini for almost every dinner and decided to finally give stuffed zucchini a try.

How to Make Sausage Stuffed Zucchini:
- Cook sausage until well browned and crumbled.
- Cook onions in olive oil and season with salt and pepper, until softened.
- Mix sausage, onions and shredded cheese together.
- Wash zucchini and cut into about 3 inch chunks. Scoop out the center of the zucchini leaving a bit in the bottom to form a cup. A soup spoon works great for this.
- Stuff sausage mixture into zucchini cups.
- Prepare a grill fire to about 300° with hickory, oak or pecan for smoke flavor.
- Place zucchini cups on the grill using a grill pan over indirect heat. Cook for about 30 minutes with the grill lid closed.
- Remove from grill and allow to rest 5 minutes before serving.
Serve stuffed zucchini as an appetizer, main dish or side dish. It is an incredibly delicious and flavorful way to enjoy all of the garden fresh zucchini.
If you have small zucchini, you can also slice the zucchini in half lengthwise and scoop out the center to form a boat for the stuffing. We had some larger zucchini (not huge) and the cups worked perfect for the stuffing.
Our entire family loved the stuffed zucchini. I swear grilling has been a real deal changer in getting my kids to eat vegetables!

Instructions
- Cook sausage in a skillet over medium heat, crumbling as it cooks until well browned.

- Wash zucchini and cut into about 3 inch chunks. Use a spoon to scoop out the inside, leaving a bottom to form a cup.
- Mix sausage, onions and cheese together and fill zucchini cups.
- Prepare a grill fire to 300° with hickory, oak or pecan for smoke flavor.
- Lay zucchini cups on a grill pan and cook over indirect heat for about 30 minutes with the grill closed.
- Remove from grill and allow to rest 10 minutes before serving.
Can the zucchini cups be cooked in the oven and if so how?

You can cook them in the oven. Use the same temperature and time as grilling. Just put on a lined or greased baking sheet.
