Sausage Stuffed Zucchini Appetizers

Serve stuffed zucchini as an appetizer, main dish or side dish. It is an incredibly delicious and flavorful way to enjoy all of the garden fresh zucchini.

If you have small zucchini, you can also slice the zucchini in half lengthwise and scoop out the center to form a boat for the stuffing. We had some larger zucchini  (not huge) and the cups worked perfect for the stuffing.

Our entire family loved the stuffed zucchini. I swear grilling has been a real deal changer in getting my kids to eat vegetables!

We used our homemade sausage recipe for this stuffed zucchini, if you get the chance to make your own, it’s seriously the best. Of course your favorite brand will work great or you might also try it with a smoked sausage like andouille.

    1. Hi Louise,
You can cook them in the oven. Use the same temperature and time as grilling. Just put on a lined or greased baking sheet.
