If you are looking for a hearty dinner to make on the grill, try chicken thighs. They tend to stay a little juicier and have more flavor than chicken breasts. The brown sugar rub gives an amazing amount of flavor to both the chicken and the veggies!

How to Make Grilled Chicken Thighs:

Brown Sugar Rub for Chicken and Vegetables

  • Mix rub together by combining brown sugar, garlic, smoked paprika, salt and pepper.

  • Drizzle chicken thighs with olive oil and sprinkle with 2 tablespoons of rub.

Sliced vegetables with brown sugar rub

  • Slice vegetables and toss with olive oil and 2 tablespoons of rub. 
  • Prepare a grill fire to 300° with hickory or oak for smoke flavor. 

Grilled Vegetables

  • Place vegetables on a grill pan and place over indirect heat.

Grilled Chicken Thighs

  • Place chicken over direct fire to sear 5 minutes. Move chicken to indirect heat and close the grill lid. 

Grilled Vegetables

  • Stir vegetables every 10 minutes. 

Grilled Chicken with Brown Sugar Rub

  • Cook until chicken reaches 165° internal temperature with a meat thermometer inserted close to the bone, about 25 – 30 minutes.

  • Remove chicken and vegetables from the grill and allow to rest 10 minutes before serving.

Ingredients

  • 4 chicken thighs
  • 1 onion sliced thin
  • 1 zucchini sliced thin
  • 2 sweet bell peppers, sliced thin
  • 1/4 cup olive oil
  • 4 tablespoons brown sugar
  • 2 tablespoons granulated garlic
  • 1 tablespoon smoked paprika
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper

Instructions

  1. Prepare a grill fire to 300° with hickory or oak for smoke flavor.
  2. Pat chicken breasts dry with paper towels.
  3. Mix brown sugar with garlic, smoked paprika, salt and pepper.
  4. Drizzle chicken with 2 tablespoons olive oil and sprinkle with 2 tablespoons brown sugar rub.
  5. Mix sliced vegetables with 2 tablespoons olive oil and 2 tablespoons of brown sugar rub and toss to coat.
  6. Spread vegetables over a grill pan.
  7. Place grill pan over indirect heat.
  8. Cook chicken over direct fire for 5 minutes to sear. Move to indirect heat and cook with the lid closed.
  9. Stir vegetables every 10 minutes. Continue to cook with the lid closed until chicken reaches 165° internal temperature, about 25- 30 minutes.
  10. Remove chicken and vegetables from grill and allow to rest 10 minutes before serving.

Notes

Store remainder of brown sugar rub in an airtight container.
