How to Make Grilled Chicken Thighs:
- Mix rub together by combining brown sugar, garlic, smoked paprika, salt and pepper.
- Drizzle chicken thighs with olive oil and sprinkle with 2 tablespoons of rub.
- Slice vegetables and toss with olive oil and 2 tablespoons of rub.
- Prepare a grill fire to 300° with hickory or oak for smoke flavor.
- Place vegetables on a grill pan and place over indirect heat.
- Place chicken over direct fire to sear 5 minutes. Move chicken to indirect heat and close the grill lid.
- Stir vegetables every 10 minutes.
- Cook until chicken reaches 165° internal temperature with a meat thermometer inserted close to the bone, about 25 – 30 minutes.
- Remove chicken and vegetables from the grill and allow to rest 10 minutes before serving.
- Serve chicken and vegetables with Rice Pilaf and Grilled Asparagus.

Ingredients
- 4 chicken thighs
- 1 onion sliced thin
- 1 zucchini sliced thin
- 2 sweet bell peppers sliced thin
- ¼ cup olive oil
- 4 tablespoons brown sugar
- 2 tablespoons granulated garlic
- 1 tablespoon smoked paprika
- 1 tablespoon kosher salt
- 1 tablespoon black pepper
Instructions
- Prepare a grill fire to 300° with hickory or oak for smoke flavor.
- Pat chicken breasts dry with paper towels.
- Mix brown sugar with garlic, smoked paprika, salt and pepper.
- Drizzle chicken with 2 tablespoons olive oil and sprinkle with 2 tablespoons brown sugar rub.
- Mix sliced vegetables with 2 tablespoons olive oil and 2 tablespoons of brown sugar rub and toss to coat.
- Spread vegetables over a grill pan.
- Place grill pan over indirect heat.
- Cook chicken over direct fire for 5 minutes to sear. Move to indirect heat and cook with the lid closed.
- Stir vegetables every 10 minutes. Continue to cook with the lid closed until chicken reaches 165° internal temperature, about 25- 30 minutes.
- Remove chicken and vegetables from grill and allow to rest 10 minutes before serving.
