Ingredients for Bacon Wrapped Stuffed Chicken:

  • Boneless Chicken ~ We used thighs, which are more flavorful and juicy, chicken breasts will work also.
  • Cream Cheese
  • Mozzarella Cheese
  • Everything Bagel Seasoning ~ Garlic, black and white sesame seeds, onion, poppy seeds, salt.
  • Kosher Salt
  • Bacon ~ Thin sliced works best for this recipe
  • Garlic and Onion Rub ~ Brown Sugar, Granulated Garlic, Onion Powder, Ground Rosemary, Dried Thyme, Smoked Paprika, Kosher Salt, Black Pepper, Dry Mustard.

How to Grill Bacon Wrapped Stuffed Chicken:

  • Pound chicken into 1/4 inch thick.
  • Mix cream cheese with mozzarella, everything bagel seasoning and kosher salt.
  • Spread cream cheese mixture over chicken.

  • Roll chicken up from the short side and place on a rimmed baking sheet.

  • Wrap 1 to 2 slices of bacon around each chicken roll.

  • Grill over indirect fire with the grill closed. Pecan or hickory are great for adding smoke flavor.

  • Cook chicken about 30- 45 minutes checking internal temperature with a digital meat thermometer, cooking until internal temperature reaches 165°.

Ingredients

  • 6 - 7 boneless skinless chicken thighs
  • 4 ounces cream cheese softened
  • 1 cup shredded mozzarella
  • ¼ cup everything bagel seasoning
  • ½ teaspoon kosher salt
  • 12 slices thin bacon
  • 3 tablespoons sweet garlic and onion rub

Instructions

  • Prepare a grill fire to 325° using hickory or pecan for smoke flavor.
  • Pound chicken into 1/4 inch thickness using a meat mallet.
  • In a bowl, combine cream cheese with mozzarella, everything bagel seasoning and kosher salt. 
  • Spread cream cheese mixture over chicken. 
  • Roll chicken up from the short side and place on a rimmed baking sheet.
  • Wrap 1 to 2 slices of bacon around each chicken roll. 
  • Sprinkle garlic and onion rub over the chicken.
