Ingredients for Philly Cheesesteak Sliders:

  • Sirloin Steak
  • Olive Oil
  • Steak Rub
  • Bell Pepper
  • Onion
  • Kosher Salt
  • Fresh Ground Pepper
  • Slider Buns  ~ We used King’s Hawaiian Slider Buns
  • Provolone Cheese Slices
  • Butter

Philly Cheesesteak Sliders.

How to Make Philly Cheesesteak Sliders:

  • Prepare a grill fire using hickory or pecan chunks for smoke flavor.

Grill the Steaks:

2 Sirloin steaks coated in steak rub.

  • Pat the sirloin steak dry using paper towels.
  • Coat the steaks with olive oil on both sides.
  • Sprinkle Steak rub over the steaks on both sides.

  • Grill the steak over indirect fire with the grill closed about 5 minutes.

  • Flip the steaks and continue to cook until steak reaches 135° using a digital meat thermometer.

  • Remove steaks from the grill to a rimmed sheet pan. Cover with foil and set aside to rest while you cook the peppers and onions.

Grill the Peppers and Onions:

Sliced onions, yellow and orange bell peppers.

  • Slice the onions and bell peppers into thin strips.

  • Toss with olive oil, salt and pepper. Place on a grill pan.
  • Cook peppers and onions over indirect grill fire for about 15- 20 minutes, stirring every 5 minutes.
  • Remove from grill and set aside.

Make the Sliders:

  • Place steak on a cutting board and slice into 1/8 inch thick slices.

  • Place slider rolls in a baking pan.
  • Completely cover the bottom rolls with slices of provolone, overlapping the cheese.
  • Top with steak and peppers.

  • Add the top buns.
  • Brush with melted butter.

  • Cover the pan with foil.
  • Bake in a preheated oven for 15 minutes.
  • Remove from oven.

  • Cut in between sandwiches with a sharp knife.

  • Place on a serving platter.

How to Store and Reheat:

  • Store sliders wrapped in aluminum foil or plastic wrap in the refrigerator up to 3 days.
  • Reheat sliders in an aluminum foil covered pan at 350° for about 10 minutes or in an air fryer for 5 minutes.

Can Sliders Be Made Ahead:

The steak, peppers and onions can be grilled ahead of time and stored in air tight containers in the refrigerator a day in advance. Build the sandwiches just before serving.

What is the Best Steak for Philly Cheesesteaks:

Ribeye steaks are the top choice but we usually choose a nice sirloin steak for cheesesteak sandwiches and for these sliders. Sirloin is much more affordable while still being tender and flavorful, especially when grilled.

Ingredients

  • 1 pound sirloin steak
  • 2 tablespoons olive oil divided
  • 1 ½ tablespoons steak rub
  • 1 yellow onion sliced thin
  • 1 bell pepper sliced into thin strips
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh ground pepper
  • 1 package slider buns ours had 9 buns
  • 14 slices provolone cheese
  • 2 tablespoons butter

  • Pat the sirloin steak dry using paper towels.
  • Coat the steaks with 1 tablespoon olive oil on both sides and sprinkle with steak rub.
  • Grill the steak over indirect fire with the grill closed about 5 minutes.
  • Flip the steaks and continue to cook until steak reaches 135° using a digital meat thermometer.

  • Top with steak and peppers. 
  • Layer remaining cheese over the steak and peppers. 
  • Add the top buns and brush with melted butter.
  • Cover the pan with foil. 
  • Bake in a preheated oven for 15 minutes.
  • Remove from oven. 
  • Cut in between sandwiches with a sharp knife.
  • Place on a serving platter. 

Notes
