Ingredients Needed:
- Strip Steak or Sirloin Steak
- Olive Oil
- Brown Sugar
- Granulated Garlic
- Onion Powder
- Dried Basil
- Dried Oregano
- Dried Thyme
- Kosher Salt
- Black Pepper

How to Grill Steak Caprese Appetizers:
- Mix the brown sugar with the garlic, onion, basil, oregano, thyme, salt and pepper.
- Slice steak into 2 inch pieces.
- Place steak in a bowl and drizzle with olive oil.
- Add dry rub and toss to coat.
- Prepare a grill fire with pecan or hickory.
- Place steak bites on the grill with tomatoes over indirect fire.
- Cook with the grill closed about 4 minutes.
- Remove the tomatoes and flip the steak bites.
- Continue to cook the steak bites until they reach desired doneness using a digital meat thermometer. We pulled ours at 135°.
Internal Temperature for Steak Appetizers:
- Rare: 130°
- Medium Rare: 140°
- Medium: 155°
- Thread tomatoes, mozzarella pearls and steak bites onto appetizer picks.
- Garnish with fresh basil and serve immediately.
How to Store and Reheat:
- Store steak bites in an airtight container in the refrigerator up to 3 days.
- To reheat, remove steak from skewers and heat in an olive oil coated skillet over medium heat for 2 - 3 minutes per side.
Steak bites are a budget friendly way to serve an expensive cut of steak for a crowd. This recipe uses a little over a pound of steak and makes 28- 30 appetizers. We used strip steaks, sirloin is also a good option. We generally just go with the best deal we can find at the grocery store.

- 1 tablespoon brown sugar
- 1 teaspoon granulated garlic
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 ¼ pounds strip steak, cut into 2-inch pieces
- 1 tablespoon olive oil
- 8 ounces grape tomatoes
- 6 ounces mozzarella pearls
- 1 teaspoon minced fresh basil
Instructions
- Prepare a grill fire to 400° using pecan or hickory for smoke flavor.
- Mix the brown sugar with the garlic, onion, basil, oregano, thyme, salt and pepper.
- Place steak in a bowl and drizzle with olive oil.
