Grilled Chicken Sandwiches

Grilled chicken sandwiches are tender, juicy and full of amazing flavor. Italian marinated chicken is grilled and served up on toasted buns with melted mozzarella.

Grilled chicken makes a great weeknight dinner and these sandwiches are an easy way to feed a crowd. Serve them up with BBQ Bacon Onion Baked Potatoes or southern potato salad and deviled eggs.

Italian marinated chicken served up on toasty buns with melted cheese is a great flavor combination. We like to top our chicken sandwiches with mayo and pesto or try our sweet and spicy mustard if you aren’t a fan of mayo.

Ingredients Needed

  • Chicken Breasts
  • Italian Dressing
  • Sandwich Buns
  • Pesto
  • Mayonnaise

Step By Step Directions

STEP 1 Slice chicken breasts into 1/2 inch thick strips.

STEP 2 Make a quick Italian dressing or use your favorite brand. We used this homemade Italian dressing recipe.

STEP 3 Place chicken into a zip top bag or bowl and pour Italian dressing over the top. Press out the air and seal the bag.

STEP 4 Turn it over a few times to coat the chicken in the marinade. Refrigerate for at least an hour or up to 4 hours.

STEP 5 Prepare a grill fire to 300° using hickory or pecan for smoke flavor.

STEP 6 Remove chicken from marinade. Cook chicken with the grill closed about 5 minutes.

STEP 7 Turn the chicken and continue to cook until chicken reaches 165°.

STEP 8 Remove from grill.

STEP 9 Place bottom of sandwich buns on a lined baking sheet. Top with chicken.

STEP 10 Sprinkle with shredded mozzarella cheese.

STEP 11 Return to the grill or place under oven. broiler until cheese is melted.

STEP 12 Remove from grill.

STEP 13 Add the top buns with pesto and mayo if desired.

How to Store and Reheat

Store leftover sandwiches wrapped tight in plastic wrap in the refrigerator up to 2 days.

To reheat, place sandwiches on a lined baking sheet, remove the top bun and bake the sandwiches at 350° for 8- 10 minutes or until heated through.

Ingredients

  • ½ cup Italian salad dressing

  • 2 cups shredded mozzarella cheese
  • ½ cup pesto
  • mayonnaise for serving

  • Refrigerate 1 hour or up to 4 hours.
