Ingredients Needed

  • Grilled or Smoked Chicken
  • Olive Oil
  • Onions
  • Peppers
  • Chicken Broth
  • Heavy Cream
  • Whole Milk
  • Corn Starch
  • Creole Seasoning
  • Kosher Salt
  • Parmesan Cheese
  • Parsley
  • Cooked and Drained Pasta ~ We used angel hair, spaghetti or fettuccine works well too.

Step By Step Directions

Chopped onions and bell peppers / chopped chicken.

STEP 1 Dice onions and bell peppers and cut cooked chicken into bite size pieces.

Collage: cooking onions & bell peppers/ making sauce/ adding cheese/ chicken.

STEP 2 Cook onions and bell peppers in olive oil in a large, deep skillet or dutch oven over medium- high heat. Stir often until vegetables are softened.

STEP 3 Add chicken broth to the pan. Mix heavy cream with milk and corn starch and add to the pan, whisking together. Add the Creole seasoning and salt. Continue to cook, whisking often until thickened.

STEP 4 Stir in the parmesan and chopped chicken.

STEP 5 Garnish with parsley.

STEP 6 Serve over cooked pasta.

How to Store and Reheat

  • Store leftover pasta and sauce in an air tight container in the refrigerator.
  • Reheat sauce and pasta in a pan over low heat. Stir in a tablespoon of milk or broth if sauce is too thick. Cook, stirring often until heated through.

Ingredients

  • 2 cups grilled or smoked chicken chopped into bite size pieces
  • 3 tablespoons olive oil
  • 2 cups diced onion
  • 2 cups diced bell peppers
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ½ cup whole milk
  • 2 tablespoons corn starch
  • ¼ cup Creole Seasoning
  • 1 teaspoon kosher salt
  • 1 cup finely grated Parmesan cheese
  • 1 tablespoon chopped parsley
  • 1 pound cooked and drained pasta angel hair, spaghetti or linguine

Instructions

  • Pour olive oil into a dutch oven or large deep skillet. Cook diced onions and bell peppers in the olive oil over medium-high heat, stirring often until softened.
  • Add chicken broth. Mix heavy cream and milk with cornstarch and whisk into the pan.
  • Next, add the Creole seasoning and salt. Continue to cook, whisking often until mixture is thickened.
  • Lower to simmer and whisk in the grated Parmesan and chopped chicken.
  • Garnish with parsley and serve over cooked pasta.

Notes

Store leftovers in an airtight container in the refrigerator up to 4 days.
Reheat in a pan with a tablespoon or two of milk or broth if sauce is too thick, stirring until heated through.
