- 2 cups grilled or smoked chicken chopped into bite size pieces
- 3 tablespoons olive oil
- 2 cups diced onion
- 2 cups diced bell peppers
- 1 cup chicken broth
- ½ cup heavy cream
- ½ cup whole milk
- 2 tablespoons corn starch
- ¼ cup Creole Seasoning
- 1 teaspoon kosher salt
- 1 cup finely grated Parmesan cheese
- 1 tablespoon chopped parsley
- 1 pound cooked and drained pasta angel hair, spaghetti or linguine
Pour olive oil into a dutch oven or large deep skillet. Cook diced onions and bell peppers in the olive oil over medium-high heat, stirring often until softened.
Add chicken broth. Mix heavy cream and milk with cornstarch and whisk into the pan.
Next, add the Creole seasoning and salt. Continue to cook, whisking often until mixture is thickened.
Lower to simmer and whisk in the grated Parmesan and chopped chicken.
Garnish with parsley and serve over cooked pasta.
Store leftovers in an airtight container in the refrigerator up to 4 days.
Reheat in a pan with a tablespoon or two of milk or broth if sauce is too thick, stirring until heated through.
