Loaded baked potatoes are always an easy dinner to add to this week's dinner plans. Only a few ingredients and it's ready in about an hour.
What is Cube Steak?
Cube steak is a great cut of meat to keep on hand. You can often find it on sale and it cooks up so quickly for a delicious meal.
Cube steak is generally tenderized round steak. We love it for chicken fried steak sandwiches but have you ever grilled it? It literally cooks in just a few minutes and it's so tender.
You could make sandwiches with the grilled bbq cube steak but we had these huge baked potatoes cooked up and who can resist a loaded baked potato?
How to Grill Cube Steak:
- Prepare a grill fire to about 300°. Use hickory or oak for wood smoke if available.
- Pat steak dry with paper towels.
- Place steak over indirect fire.
- Brush with barbecue sauce and close the lid.
- Cook for 5 minutes and flip the steak. Brush the other side with barbecue sauce and cook about another 2 minutes. Steak should be fully cooked in about 7 -10 minutes.
- Remove from grill and allow to rest 5 minutes before slicing.
- Cut steak into thin strips and then into 1 inch pieces.
- Drizzle with barbecue sauce.
How to Make BBQ Stuffed Baked Potatoes
- Scrub potatoes and dry completely.
- Prick with a fork and place on a baking sheet.
- Drizzle with olive oil and sprinkle with coarse salt.
- Bake at 400° for 1 hour to 1 hour 15 minutes.
- Remove from oven and keep warm while you grill the steak.
- Slice potatoes almost in half and fluff insides with a fork.
- Add butter, salt and pepper.
- Top with cheese and chopped bbq steak.
- Drizzle with barbecue sauce and top with green onions. Serve immediately.

Ingredients
- 4 russet baking potatoes
- 2 tablespoons olive oil
- ½ teaspoon kosher salt
- 1 pound cube steak
- ¾ barbecue sauce
- ¼ cup butter
- salt and pepper
- ½ cup shredded cheese
- 2 green onions, sliced
Instructions
- Preheat oven to 425°.
- Scrub potatoes and dry thoroughly.
- Prick with a fork and place on a baking sheet.
- Rub potatoes with olive oil and sprinkle with kosher salt.
- Bake for 1 hour to 1 hour 15 minutes or until potatoes are cooked through.
- Meanwhile, prepare a grill fire to 300° with hickory or oak for smoke flavor.
- Pat cube steak dry with paper towels.
- Place over indirect fire and brush with ¼ cup of barbecue sauce.
- Close the lid and cook 5 minutes. Flip steak and brush other side with ¼ cup of barbecue sauce.
- Continue to cook 3-5 minutes or until steak is cooked through.
- Remove to a cutting board and rest 5 minutes before slicing.
- Slice steak into thin strips and then into 1 inch pieces.
- Split baked potatoes and fluff insides with a fork. Mix with butter, salt and pepper.
- Top potatoes with shredded cheese, bbq steak, barbecue sauce and green onions.
