BBQ Chicken Baked Potatoes are a cheap meal idea that is so easy to make with whole grilled chicken or a rotisserie chicken from the deli. A filling and delicious meal that can be made on the grill with easy cleanup and no oven time.

BBQ Chicken Baked Potatoes ~ Easy Loaded Baked Potatoes

We love to make grilled loaded baked potatoes with just about any meal on the grill and it’s so simple to dress them up and serve them as a main coarse with grilled chicken. Add a side salad and some grilled garlic bread for a family favorite meal.

Ingredients Needed

  • Russet Potatoes
  • Olive Oil
  • Kosher Salt
  • Grilled Chicken
  • BBQ Sauce
  • Butter
  • Fresh Ground Pepper
  • Shredded Cheddar Cheese
  • Sour Cream
  • Chives

Step by Step Instructions

  • Scrub the potatoes and dry well.
  • Rub the potatoes with olive oil and sprinkle with kosher salt. 
  • Pierce potatoes with a large tined fork.
  • If using a charcoal grill, wrap the potatoes in aluminum foil, we used our pellet grill for this recipe so we did not wrap the potatoes.

  • Place potatoes on a grill over indirect fire and cook with the grill closed for 1 to 1 1/2 hours.

  • Potatoes are cooked through at 205° internal temperature, using a digital meat thermometer.

  • Remove potatoes from the grill. 
  • If you are using leftover chicken, heat the chicken in a foil packet on the grill for the last 20 minutes of cooking time with the potatoes or heat in a skillet on the stove top over medium heat.

  • Split potatoes and add butter, salt and fresh ground pepper. 

BBQ Chicken Baked Potatoes.

  • Top with shredded cheese and chopped chicken.
  • Drizzle with BBQ sauce. 
  • Serve with sour cream and chopped chives if desired.

How to Store and Reheat

  • Store leftover baked potatoes in an airtight container in the refrigerator up to 4 days.
  • Wrap whole baked potatoes in foil and reheat in oven or on the grill until heated through.
