These Mexican Grilled Chicken tenders make amazing tacos and burrito bowls. We cooked a double batch for this recipe so that we could get 2 meals from one cook on the pellet grill.

Ingredients for Mexican Chicken Tenders

  1. Place chicken tenders on a baking sheet and spray or drizzle with olive oil and toss to coat on both sides.
  2. Sprinkle fajita seasoning over the chicken.
  3. Toss until well coated on all sides.
  1. Cook with the grill closed for 15 minutes.
  2. Check with a digital meat thermometer, cooking until internal temperature reaches 165°.

Ingredients

  • 3 pounds chicken tenders or boneless chicken breasts or thighs
  • 3 tablespoons olive oil
  • cup fajita seasoning

Instructions

  • Prepare a grill fire or pellet grill to 300°. We used competition pellets for the pellet grill.
  • Place chicken on a rimmed baking sheet and coat with olive oil.
  • Sprinkle with fajita seasoning, tossing to coat.
  • Place chicken tenders onto the grill and cook with the lid closed.
  • Cook 15- 20 minutes cooking until chicken reaches 165° using a digital meat thermometer.
  • Remove from grill and serve immediately.

Notes

Store in an airtight container in the refrigerator up to 4 days.
Reheat in a skillet coated with olive oil over medium heat, turning after a few minutes to heat from both sides.

    1. Hi Jo,
      You could make these in the oven at 350° on a lined baking sheet for 15- 20 minutes, use a digital meat thermometer to cook to 165°. You could also cook in a skillet or grill pan coated with olive oil over medium heat, turn after 5 minutes, continue cooking to 165°. I hope that helps.
