Chicken tacos are always a hit for dinner and they are even more delicious when the chicken is grilled. These Mexican Grilled Chicken tenders make amazing tacos and burrito bowls. We cooked a double batch for this recipe so that we could get 2 meals from one cook on the pellet grill.

🔥 Step By Step Directions

  • Place chicken tenders on a baking sheet and spray or drizzle with olive oil and toss to coat on both sides.

  • Sprinkle fajita seasoning over the chicken.

  • Toss until well coated on all sides.

  • Cook with the grill closed for 15 minutes.

  • Remove from grill and serve immediately. 

🔥 How to Store and Reheat

Store in an airtight container in the refrigerator up to 4 days.

Reheat in a skillet coated with olive oil, turning to heat from both sides, cooking until heated through.

Ingredients

  • 3 pounds chicken tenders or boneless chicken breasts or thighs
  • 3 tablespoons olive oil
  • cup fajita seasoning

Instructions

  • Prepare a grill fire or pellet grill to 300°. We used competition pellets for the pellet grill.
  • Place chicken on a rimmed baking sheet and coat with olive oil.
  • Sprinkle with fajita seasoning, tossing to coat.
  • Place chicken tenders onto the grill and cook with the lid closed.
  • Cook 15- 20 minutes cooking until chicken reaches 165° using a digital meat thermometer.
  • Remove from grill and serve immediately.

Notes

    1. Hi Jo,
      You could make these in the oven at 350° on a lined baking sheet for 15- 20 minutes, use a digital meat thermometer to cook to 165°. You could also cook in a skillet or grill pan coated with olive oil over medium heat, turn after 5 minutes, continue cooking to 165°. I hope that helps.
