In an effort to get budget friendly meals on the table and not spend forever in the kitchen, we’ve been grilling up our meal prep chicken on the weekends. These grilled pesto chicken sandwiches are one of the easiest meals to make for busy weeknights.

Pesto Chicken Sandwiches ~ Easy Grilled Chicken Sandwiches

Sandwiches are perfect for busy weeknights and we love them when it’s really too hot to cook. The layers of flavor from the basil pesto, smoky grilled chicken, tomatoes and gooey cheese are just impossible to beat in these sandwiches.

Ingredients Needed:

  • Focaccia Bread ~ Or flatbread.
  • Basil Pesto
  • Grilled Chicken ~ Sliced or shredded. Rotisserie chicken will work also.
  • Tomatoes ~ Fresh, roasted or sun dried.
  • Mozzarella Cheese ~ Shredded.
  • Mayonnaise 

How to Make Pesto Chicken Sandwiches:

3 focaccia bread slices for sandwiches.

  • Slice the Focaccia bread into squares and then slice in half to create a top and bottom layer.

  • Spread the bottom sides of the bread with pesto and place on a baking sheet.
  • Layer chicken over the pesto. 
  • Top with mozzarella and tomatoes. 
  • Place under the broiler for about 3- 5 minutes until the cheese is melted. Keep a close eye on it so that it doesn’t burn.

  • Remove from the oven.

  • Spread mayonnaise or more pesto onto the top sides of the bread and place over the sandwiches.

  • Slice the focaccia bread in half to create tops and bottoms.
  • Spread pesto on the bottoms of the slices.
  • Top with sliced chicken, mozzarella and a few slices of tomato.
  • Place on a baking sheet and cook under the broiler for about 3- 5 minutes until the cheese is melted.
  • Spread mayonnaise or additional pesto on the top bread layer and place over the sandwiches.
  • Serve immediately.

  1. I read it with no problem. I have used Italian dressing, ( bottle) on chicken and beef, shrimp. I have not tried it with honey. This will be a favorite for sure. Judy
