Grilled Prime Rib is our favorite for holiday meals and special celebrations. It’s one of the easiest meals you can cook to feed a crowd and is always an impressive main dish.

Ingredients for Garlic Butter Standing Rib Roast

  • Bone-In Prime Rib Beef Roast  ~ A boneless prime rib will also work with this recipe.
  • Salted Butter 
  • Minced Garlic
  • Fresh Rosemary
  • Dried Thyme
  • Kosher Salt
  • Black Pepper
  • Brown Sugar

How to Grill a Standing Rib Roast:

  • Make the garlic butter by melting butter in a small skillet or saucepan and add minced garlic. Cook on low heat, stirring often until garlic is lightly toasted. 
  • Remove from heat, stir in rosemary, thyme, salt and pepper. Set aside about 2 minutes. Stir in brown sugar until dissolved.

  • Set roast out on a rimmed baking sheet. Pat dry with paper towels. 
  • Spoon garlic butter mixture over the rib roast.

  • Cook over indirect fire with the grill closed for about 20- 25 minutes per pound, cooking to desired doneness.

INTERNAL TEMPERATURE FOR STANDING RIB ROAST:

  • Rare: 120 -125°
  • Medium Rare 130 – 135°
  • Well Done 140 – 145°

  • Use a digital meat thermometer to test the center of the roast. This is the best way to ensure your prime rib is perfectly cooked to your desired doneness.

  • Remove roast from grill to a rimmed baking sheet. Tent with foil and rest for 20 minutes before slicing.

  • Slice as needed.

How to Store and Reheat:

Wrap roast in several layers of plastic wrap and store in the refrigerator up to 4 days. Add a layer of foil or place in a zip top freezer bag to freeze up to 3 months.

Reheat sliced prime rib in a skillet coated in olive oil over medium heat, turning after about 2 minutes and continue to cook until warm.

Ingredients

  • 10 pound Bone-In Prime Rib Beef Roast
  • ½ cup salted butter
  • 2 tablespoons minced garlic
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground pepper
  • 2 teaspoons brown sugar

Instructions

  • Prepare a grill fire to 250° using hickory or pecan for smoke flavor.
  • Set the prime rib on a rimmed baking sheet and pat dry with paper towels.
  • Melt butter in a small skillet over low heat. Add minced garlic and cook, stirring often until garlic is lightly toasted. Remove from heat and add rosemary, thyme, salt and pepper. Set aside 2 minutes. Stir in brown sugar until dissolved.
  • Spoon toasted garlic butter over the roast, rubbing it to cover the meaty sides of the roast.
  • Place over indirect fire and cook with the grill closed for about 15- 20 minutes per pound.
  • Test roast using a digital thermometer into the center of the roast, cooking to desired temperature.
  • Remove from grill to a clean baking sheet, tent with foil and rest 20 minutes before slicing.
