  • Olive Oil
  • Steak Rub

Step By Step Directions for the Best Grilled Cheese

Grilling 2 sirloin steaks.

Grill the Steak:

  1. Season steak with olive oil and steak rub on both sides.
  2. Cook over a hot grill fire, turning after 5 minutes and continuing to cook until steak reaches 130° or desired doneness using a digital meat thermometer.
  3. Remove from grill. Rest 10 minutes. Slice steak into thin strips. If making ahead, cool to room temperature, wrap and refrigerate.

Make the Sandwiches:

  1. Slice onions thin and cook in melted butter over medium heat. Season with salt and pepper and stir occasionally until onions are caramelized. Skillet with onions and sliced steak.
  2. Add sliced steak to the pan to heat slightly, skip this step if you are not using leftovers.Sliced bread with butter for 4 sandwiches.
  3. Butter one side of each slice of bread. Collage making steak, onion, Swiss grilled cheese sandwiches on a griddle.
  4. Heat a griddle and place 2 slices of bread, butter side down.
  5. Layer each with Swiss cheese and steak slices.
  6. Add a layer of onions and another slice of Swiss.
  7. Top with remaining bread slices, butter side up.
  8. Cook 2- 3 minutes per side until sandwiches are golden brown and cheese is melted.

Ingredients

For the Steak

  • 1 pound sirloin steak
  • 1 tablespoon olive oil
  • 2 tablespoons steak rub

For Grilled Cheese Sandwiches

  • 1 large onion sliced thin
  • 6 tablespoons softened salted butter divided
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh ground pepper
  • 8 slices wheat bread
  • 8 slices Swiss cheese

  • Prepare a grill fire to 350° using hickory chunks for smoke flavor.
  • Season steak with olive oil and steak rub on both sides.
  • Cook over a hot grill fire, turning after 5 minutes and continuing to cook until steak reaches 130° or desired doneness using a digital meat thermometer.

Storage: Leftover steak and grilled cheese sandwiches can be wrapped in plastic wrap and stored in the refrigerator up to 2 days.
Reheat: Wrap sandwiches in aluminum foil and cook in oven or toaster oven at 350° for 8- 10 minutes.
