Meatloaf Shots

Meatloaf Shots are a delicious twist on the classic meatloaf and mashed potatoes dinner. Potatoes are filled with delicious meatloaf and then grilled to perfection with hardwood smoke for a hearty meal or fun appetizer.

What are meatloaf shots?

Inspired by the pig shots appetizers, we made hollowed out potatoes and filled them with ground beef meatloaf mixture and grilled them. Hearty enough for a main course or serve as a fun appetizer.

Ingredients for Meatloaf Shots:

  • Russet Potatoes – medium to small size
  • Ground Beef – We used 70/30
  • Diced Onions
  • Large Eggs
  • Steak Rub: Brown Sugar, Granulated Garlic, Kosher Salt, Black Pepper, Dried Thyme, Chili Powder, Smoked Paprika
  • Olive Oil

Hot to Make Meatloaf Shots:

  • Scrub potatoes and place in a pan and cover with cold water. 
  • Parboil potatoes, by bringing to a boil and cooking about 8 – 10 minutes.
  • Drain potatoes and cool slightly.

  • Cut the ends off of the potatoes, about 1 1/2 inches off of each end.

  • Using a small knife, cut the center of the potatoes out, creating a tube.

  • Set aside and reserve the discarded ends and center of potatoes to make hash browns or add to soup.

  • Mix up the meatloaf. Add ground beef, eggs and steak rub to a large bowl.  Mix together with your hands or with a wooden spoon until thoroughly combined.

  • Stuff the meatloaf mixture into the potatoes, filling top to bottom and rounded up a bit on the top.

  • Spray the outsides of potatoes with olive oil. Place on a grill pan.

  • Cook over indirect fire on a 350° grill with the lid closed for about 35 – 40 minutes.

  • Check internal temperature of meatloaf, cooking until it reaches 165°.

  • Remove from grill and serve immediately.

  • Serve with BBQ Sauce or Honey Mustard if desired. 

How to Store and Reheat:

Store leftover meatloaf shots in an airtight container in the refrigerator up to 3 days. 

Reheat in a 350° oven for about 12 – 15 minutes or in an air fryer at 350° for about 4- 5 minutes.

Ingredients

  • 5 medium size russet potatoes
  • 1 pound ground beef 70/30
  • ¾ cup diced onion
  • 1 large egg
  • ¼ cup steak rub
  • 2 tablespoons olive oil

Instructions

  • Prepare a grill fire to about 350° using hickory or pecan for smoke flavor.
  • Scrub potatoes and place in a pan, cover with cold water and place over high heat. Bring to a boil and cook 8 - 10 minutes.
  • Drain potatoes and cool slightly.
  • Cut about 1 - 2 inches off of each end. Cut the center of each potato out leaving a tube shape.
  • Mix the ground beef, onion, eggs and steak rub together in a bowl using your hands or a wooden spoon.
  • Stuff the meatloaf mixture into the potatoes rounding at the top.
  • Spray or brush potatoes with olive oil, coating the entire outside.
  • Place on a grill pan and place over indirect fire.
  • Cook with the grill closed for about 35- 40 minutes or until meatloaf mixture reaches 165°, checking with a digital meat thermometer.
  • Remove from grill and serve immediately.

Notes

Serve with your favorite dipping sauce like barbecue sauce or honey mustard.
Store leftovers in an airtight container in the refrigerator up to 3 days.
Reheat in a 350° oven for about 12- 15 minutes or in an air fryer at 350° for about 5- 8 minutes.
