How to Cook Beef Short Ribs on the Grill

Ingredients for Beef Short Ribs Recipe
- Bone-In Beef Short Ribs – we are using grass fed beef, which is probably a little leaner than what you might find at your local grocery store.
- Olive Oil – helps the rub stick to the meat and also provides a nice sear on the ribs.
- Steak Rub: Brown Sugar, Granulated Garlic, Chili Powder, Dried Thyme, Smoked Paprika, Kosher Salt, Black Pepper.
- Sweet and Tangy BBQ Sauce – optional for serving.
How to Cook Beef Short Ribs on the Grill
- Pat ribs dry with paper towels and place on a rimmed baking sheet.
- Spray or brush with olive oil on all sides.
- Sprinkle with dry rub on all sides, pressing it onto the meat.
- Prepare a grill fire to 250° using hickory or oak for smoke flavor.
- Place ribs over indirect heat and cook with the grill closed for 1 hour.
- Turn the ribs and continue to cook another 30 minutes to 1 hour or until internal temperature reaches 205°. BBQ Sauce can be brushed over the ribs if desired about 5 minutes before you pull them from the grill if desired.
- Remove beef ribs from the grill and rest 10 minutes before serving.
- Remove rib bones and slice rib meat into thin strips with a sharp knife.
- Serve with your favorite homemade barbecue sauce.
How to Store and Reheat
- Storage: Store leftover short ribs in an airtight container or wrapped in aluminum foil in the refrigerator up to 4 days.
- Reheat: Place beef ribs in a foil packet or on a aluminum foil lined and covered baking sheet. Cook at 350° for 10 – 15 minutes or until heated through. Brush with BBQ sauce before reheating if desired.

Tips for Tender and Juicy Beef Ribs on the Grill
- Slow cooking over low heat lets intramuscular fat that marbles the beef ribs to melt and the connective tissue will break down to that tender, fall off the bone texture. Similar to cooking a pork butt or brisket.
- While you can achieve fall apart tender on any tough cut of meat in a slow cooker, dutch oven or by oven baking, the best results for the most flavor is grilling or smoking.
- Use bone-in short ribs for the best beef flavor and texture. Boneless beef ribs will not have as much flavor.
- Let the short ribs rest for 10 minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in tender, juicy and delicious beef ribs.
