Step-by-Step Instructions for Potatoes on the Grill in Foil

  1. Scrub potatoes and dry completely.
  2. Slice into wedges and place in a mixing bowl.
  3. Drizzle with olive oil and sprinkle with garlic and rub and salt, toss to coat.

  1. Make the Foil Packet: Use a large piece of heavy duty aluminum foil, about 30 inches long.
  2. Place seasoned potato wedges in a single layer down the center.

  1. Fold foil into a sealed packet.
  2. Cook over indirect heat with about a 350° fire for 45 minutes to one hour.
  3. Remove from grill and carefully open the packet, it will steam.
  4. Garnish with parsley and serve immediately.

Ingredients

  • 2 pounds russet potatoes
  • ½ cup olive oil
  • ¼ cup Garlic & Onion Rub
  • 1 teaspoon kosher salt
  • 1 tablespoon fresh parsley for garnish optional

Instructions

  • Wash potatoes and dry well. 
  • Slice potatoes into wedges and place in a large bowl.
  • Drizzle with olive oil and season with dry rub and salt. Toss potatoes to coat well. 
  • Pour potatoes down the center of a large piece of aluminum foil.
  • Fold foil around potatoes creating a sealed packet. 
  • Cook potato packet over indirect heat with about 350° fire for 45 minutes to one hour.
  • Remove from the grill to a sheet pan. Carefully open packet, it will steam. 
  • Garnish with fresh parsley and serve immediately.
