- Pork Chops – Center Cut Loin Chops or Bone-In Chops
- Olive Oil
- Spice Rub: Brown sugar, granulated garlic, kosher salt, black pepper, smoked paprika, dry mustard and red pepper flakes.

- Set pork chops out to come to room temperature while you prepare your grill fire to about 350°. Adding hickory or pecan chunks to your hot coals will add delicious smoke flavor.
- Pat pork chops dry with paper towels. Drizzle pork chops with olive oil on both sides.
- Mix brown sugar with garlic and spices in a small bowl. Sprinkle garlic and brown sugar mixture over pork chops.
- Use your fingers to press the rub into the pork chops.
- Grill pork chops over indirect heat with the lid closed about 7 minutes.
- Flip the pork chops and continue to cook until pork chops 145° internal temperature with a digital meat thermometer.

I have the same question as Barbara if you’re not grilling what do we do?
You can cook them on the stove top or in the oven. Oven temperature should be 350°, should be close to the same cook time. Use a digital thermometer to make sure pork chops are cooked to 145°.

Where is the Brown Sugar?
It is in the rub recipe.
When you pan fry, make sure you watch them closely, they will burn easily. I cut down on the brown sugar and garlic powder. Very flavorful!
Can we make these in an air fryer?
Hi Patty,
I know they would be great in the air fryer. I haven’t tried it yet but I would think temperature around 370° and depending on how thick your chops are for cooking time. I would think 10- 12 minutes but use a digital thermometer for the best results.
