Grilled Sicilian Style Steak
Grilled Sicilian Style Steak is a quick and easy meal on the grill. A simple marinade and sauce made of olive oil, lemon, garlic and delicious Mediterranean spices will take your grilled steak to a whole new level of deliciousness.
Sicilian salmoriglio sauce is often served over fish but it’s robust flavor is a great compliment to steak. It’s simple to make for a quick steak marinade while you get your grill going. Save a bit of the sauce for dipping your grilled steaks.

How to Make Salmoriglio:
Finely mince garlic cloves with kosher salt to form a paste.
Add olive oil, lemon juice, garlic, salt and Mediterranean spices together in a bowl and whisk to combine.
You can use any combination of fresh Italian herbs if you have them for this delicious sauce.
Remove 1/4 cup to reserve for dipping.
How to Make Grilled Sicilian Style Steak:
- Pour salmoriglio sauce over steak, cover and allow to set while you prepare your grill fire to about 250- 300° with hickory wood if you have it for smoke flavor.
- Place steak over direct fire to sear 5 minutes. Move to indirect heat and close the grill. Continue to cook for 8- 10 minutes. You will not need to flip the steak.
- Cook until internal temperature reaches 140-145°.
- Remove from grill and allow to rest 10 minutes before slicing.
This marinade and sauce is great for a quick cooking steak such as sirloin, flank steak or hanger steak.
Serve steak with extra salmoriglio sauce if desired.
How to Store and Reheat Grilled Steak:
Store leftover grilled steak in an airtight container. To reheat, add a couple of tablespoons of broth or water to a skillet and add sliced steak. Heat over medium heat, flipping to heat through quickly.

Ingredients
- 2 pounds sirloin steak
- 4 garlic cloves
- 1 teaspoon kosher salt
- ½ cup olive oil
- ¼ cup lemon juice
- 4 tablespoons Mediterranean Seasonings
Instructions
- Set steak out to come to room temperature while you prepare the salmorigilo sauce.
- Mince garlic cloves with kosher salt to form a paste.
- In a bowl, add garlic, olive oil, lemon juice and Mediterranean seasonings, mixing well. (Reserve 1/4 cup for dipping)
- Add steak to a zip top bag or shallow pan and pour salmorigilo over steak. Set aside while you prepare the grill.
- Prepare grill fire to about 250- 300° using hickory wood for smoke if available.
- Place marinated steak over direct fire to sear for 5 minutes. Move to indirect heat and close the grill lid.
- Continue to cook 8- 10 minutes or until internal temperature reaches 140- 145°.
- Remove steak and allow to rest 10 minutes before slicing.
- Serve with reserved sauce.
