Grilled Sicilian Style Steak is a quick and easy meal on the grill. A simple marinade and sauce made of olive oil, lemon, garlic and delicious Mediterranean spices will take your grilled steak to a whole new level of deliciousness.

Set steak out to come to room temperature while you prepare the salmorigilo sauce.
Mince garlic cloves with kosher salt to form a paste.
In a bowl, add garlic, olive oil, lemon juice and Mediterranean seasonings, mixing well. (Reserve 1/4 cup for dipping)
Add steak to a zip top bag or shallow pan and pour salmorigilo over steak. Set aside while you prepare the grill.
Prepare grill fire to about 250- 300° using hickory wood for smoke if available.
Place marinated steak over direct fire to sear for 5 minutes. Move to indirect heat and close the grill lid.
Continue to cook 8- 10 minutes or until internal temperature reaches 140- 145°.
Remove steak and allow to rest 10 minutes before slicing.
Serve with reserved sauce.
Notes
Any combination of fresh Italian herbs can be substituted for Mediterranean seasonings. Rosemary, parsley, thyme and oregano are great in this marinade. You can also add in 1/4 - 1/2 teaspoon red pepper flakes.
