Sour Cream Pork Chops
Sour Cream Pork Chops are the ultimate comfort food to serve any night of the week. Tender and juicy grilled pork chops smothered in a quick and easy sour cream sauce.
Grilled Pork Chops are on the menu regularly at our house and the sour cream sauce would also be fantastic served over our Garlic and Onion Pork Chops or Onion Thyme Pork Chops.
Smothered pork chops are a classic dinner that is always a family favorite. This version takes the flavor up a notch or two by grilling the pork chops and topping them with a delicious sour cream gravy that just takes a few minutes to put together.
Ingredients for Sour Cream Pork Chops:
- Thick Cut Pork Chops
- Olive Oil
- Steak Rub or Favorite All Purpose Seasoning
For the Sour Cream Sauce:
- Butter
- Minced Garlic
- All Purpose Flour
- Sour Cream
- Milk
- Heavy Cream
- Kosher Salt
- Coarse Black Pepper
- Fresh Thyme
How to Grill Sour Cream Pork Chops:
- Pat pork chops dry with paper towels.
- Spray or drizzle with olive oil and season with dry rub on both sides.
- Set aside until the grill is ready.
- Prepare a grill fire to 350° using hickory or pecan for great smoke flavor.

Make the Sour Cream Sauce:
- Melt butter in a large skillet over medium heat. Add minced or grated garlic, stirring often about 2 minutes.
- Whisk in flour and cook about 2 – 3 minutes.
- Whisk in sour cream, milk and heavy cream. Continue to whisk until smooth and sauce starts to bubble and is thickened.
- Reduce to low heat and add salt and pepper, whisking to combine.
- Sauce can be kept warm until pork chops are ready or set aside and reheat when ready to serve.
- Grill pork chops over indirect fire with the grill closed about 5 minutes.
- Flip the pork chops and continue to cook until internal temperature reaches 145° using a digital meat thermometer. Depending on the thickness of the pork chops will determine total cooking time. Our pork chops were about 1 1/4 inches thick and cooked in about 15 minutes.
- Remove pork chops to a serving plate and allow to rest 5 minutes before serving.
- Drizzle pork chops with sour cream sauce and garnish with fresh thyme.
Serve sour cream pork chops with mashed potatoes, broccoli and grilled garlic bread. Grilled Asparagus and Parmesan Corn on the Cob would also be great side dishes.
How to Store and Reheat:
- Store pork chops in an airtight container or wrapped in plastic wrap in the refrigerator up to 4 days.
- Sour cream sauce can be stored in an airtight container in the refrigerator up to 5 days.
- To reheat pork chops, slice thin and cook in a skillet with a bit of olive oil over medium heat.
- Heat sauce in a saucepan, adding a bit of milk if the sauce is too thick. Whisk until heated through.
The sour cream sauce is incredibly delicious and comes together really quickly. It’s makes enough to serve over mashed potatoes or rice along with the pork chops. Try it over grilled chicken too.

- 4 thick cut pork chops
- 2 tablespoons olive oil
- 2 tablespoons Steak Rub or all purpose seasoning
for the sour cream sauce:
- 3 tablespoons butter
- 3 garlic cloves, grated or minced
- 3 tablespoons all purpose flour
- 1 cup sour cream
- 1 1/4 cups milk
- 1/2 cup heavy cream
- 1 teaspoon kosher salt
- 2 teaspoons coarse black pepper
- fresh thyme for garnish
Instructions
- Prepare a grill fire to 350° with hickory or pecan chunks for smoke flavor.
- Pat pork chops dry with paper towels.
- Spray or drizzle with olive oil and sprinkle dry rub over both sides of the pork chops. Set aside until grill is ready.
- Prepare the sauce by melting butter in a large skillet over medium heat. Add garlic and stir continually, cooking about 2 minutes until garlic starts to brown.
- Whisk in flour, cook 2- 3 minutes.
- Add sour cream, milk and heavy cream, continue to cook, whisking continually until sauce thickens and starts to bubble. Whisk in salt and pepper. Keep sauce warm or set aside to reheat before serving.
- Grill pork chops over indirect fire with the grill closed for 5 minutes. Flip pork chops and continue to cook until pork chops reach 145° internal temperature using a digital thermometer.
- Remove pork chops to a serving platter, rest about 5 minutes before serving.
- Drizzle pork chops with sour cream sauce and garnish with thyme.
Notes
The sour cream sauce makes enough to serve over mashed potatoes or rice if desired.
Store leftover pork chops in an airtight container in the refrigerator up to 4 days.
Store sour cream sauce in refrigerator in an airtight container up to 5 days.
Reheat sliced pork chops in a skillet with olive oil over medium heat, stirring until heated through.
Reheat sour cream sauce in a saucepan over medium heat. Whisk in a bit of milk if sauce needs thinned. Whisk until heated through.
