Making dinner on the grill is the best for easy cleanup and we continue to grill throughout the year. Anytime we can add an easy side dish that everyone loves, it’s a big win. Whether we are grilling burgers, pork chops, ribs or steaks, this corn is a great addition.

Ingredients for Parmesan Corn on the Cob:

  • Fresh Corn on the Cob
  • Salted Butter
  • Fresh Garlic Cloves
  • Fresh Rosemary
  • Kosher Salt
  • Black Pepper
  • Parmesan Cheese

How to Grill Parmesan Corn on the Cob:

  • Remove husks and silk from corn. 
  • Mince the garlic cloves and rosemary.

  • In a small bowl, add softened butter with garlic, rosemary, salt and pepper.

  • Mix with a fork until well combined.

  • Use a large piece of heavy duty aluminum foil that is big enough to form the packet. 
  • Place the corn on the foil. 
  • Spread the corn with garlic and herb butter.

  • Wrap the foil around the corn creating a sealed packet.

  • Cook corn over indirect fire with the grill closed about 30 minutes.

  • Remove from grill and carefully open the packet.

  • Grate parmesan cheese over corn and serve immediately. 

How to Store and Reheat:

Store leftover corn in a zip top bag in the refrigerator up to 3 days.

For best results when reheating,  cut corn from the cob and place in a skillet with butter. Cook over medium heat, stirring until corn is heated through. Top with additional parmesan cheese before serving.

Ingredients

  • 5 ears corn on the cob
  • ½ cup salted butter softened
  • 2 cloves garlic minced
  • 2 teaspoons of fresh rosemary minced (or 1 teaspoon dried)
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup fresh grated parmesan cheese

Instructions

  • Prepare a grill fire to 350°.
  • Remove husks and silks from corn and place on a large sheet of heavy duty aluminum foil.
  • In a small bowl, combine butter, minced garlic, and rosemary with salt and pepper.
  • Spread over corn and fold the foil up into a sealed packet.
  • Cook corn over indirect fire with the grill closed for 30 minutes.
  • Remove from grill and carefully open.
  • Grate parmesan cheese over corn and serve immediately.

Notes

Store leftover corn in a zip top bag in the refrigerator up to 3 days. Cut corn off of the cob before reheating. Add to a skillet with melted butter, cooking over medium heat. Stir often until heated through. Top with additional parmesan cheese if desired.
