Grilled Chicken Marinade

Chicken tenders are one of my favorites for busy weeknights. Grilled Peach BBQ Chicken Tenders and our Coca-Cola Chicken are both simple and delicious making the great to add to your menu this week. 

How to Make Grilled Chicken Marinade:

  1. Start with brewed coffee (works great with your leftover morning coffee) and brown sugar in a small saucepan. Add in Worcestershire sauce, Italian seasonings, smoked paprika, granulated garlic and kosher salt.
  2. Bring the mixture to a boil, then lower to a simmer for 5 minutes. Set aside to cool. Speed up the cooling process by placing marinade in the freezer for about 15 minutes.

Marinade can be made a day in advance and refrigerated.

  1. Place chicken in a shallow dish or bowl and pour marinade over the top. Stir to coat chicken well. Cover and refrigerate at least 1 hour or up to 12 hours. 

How To Grill Marinated Chicken:

  • Prepare grill to about a 300° fire. 
  • Place marinated chicken over the fire and cook 2 minutes, flip over to sear the other side about 2 minutes. Move chicken to indirect heat and grill until internal temperature reaches 165°.

How Long to Grill Chicken:

  • Chicken Tenders ~ about 12 – 15 minutes, until internal temperature reaches 165°. 
  • Boneless Chicken Breasts ~ about 20-25 minutes, until internal temperature reaches 165°. 
  • Bone- in Chicken about 30-40 minutes, until internal temperature reaches 165°. 

How to Bake Marinated Chicken:

Preheat oven to 375°. Place chicken on a greased or lined baking dish in an even layer, not touching. 

  • Boneless Chicken Breasts: Bake for about 25- 30 minutes, until internal temperature reaches 165°. 
  • Boneless Thighs or Chicken Tenders: Bake for about 17-20 minutes, until internal temperature reaches 165°. 
  • Bone-in Chicken: Bake for about 40-45 minutes, until internal temperature reaches 165°.

Grilled Marinated Chicken with Pineapple

We grilled marinated chicken tenders and also grilled up a fresh pineapple that we cut into wedges. We just placed the pineapple over the indirect heat. We turned the pineapple once and cooked it about a total of 5 minutes. Just long enough for it to start to caramelize. 

Grilled pineapple goes great with marinated chicken. You can also use canned pineapple if that’s what you have on hand.

Grilled Chicken Marinade

The Best Grilled Chicken Marinade makes the most juicy and flavorful chicken! Just a few simple ingredients in this easy to make ahead marinade.

Ingredients

  • 1 cup brewed coffee
  • 1 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Italian seasonings
  • 1 tablespoon smoked paprika
  • 1 tablespoon granulated garlic
  • 1 teaspoon kosher salt
  • 2 pounds chicken tenders
  • 1 fresh pineapple

Instructions

  1. Add coffee, brown sugar, Worcestershire sauce, Italian seasonings, paprika, garlic and salt to a small saucepan.
  2. Bring to a boil, lower to simmer and cook 5 minutes.
  3. Set aside to cool or place in freezer for about 15 minutes.
  4. Add chicken to a bowl and pour marinade over the top. Stir well until evenly coated. Cover and refrigerate at least one hour our up to 12 hours.
  5. To Grill chicken: Prepare grill to a 300° fire with hickory or oak for smoke flavor.
  6. Place chicken over fire and cook 2 minutes, turn to sear the other side about 2 minutes.
  7. Move chicken to indirect heat and cook for 12-15 minutes or until internal temperature reaches 165°.
  8. Add pineapple to indirect heat for 5-7 minutes, turning once just until pineapple starts to caramelize.
  9. Allow chicken to rest 5 minutes before serving.
  10. Serve chicken with grilled pineapple.

Notes

  • Boneless Chicken Breasts ~ about 20-25 minutes, until internal temperature reaches 165°. 
  • Bone- in Chicken about 30-40 minutes, until internal temperature reaches 165°. 
    TO BAKE CHICKEN:
  • Preheat oven to 375°.
  • Place chicken on a greased or lined baking sheet. Bake for 17-20 minutes or until internal temperature reaches 165°. Add pineapple to sheet pan about 7 minutes before chicken is done if desired.
