Ingredients Needed
- Boneless Chicken Thighs - Skin on or remove it if preferred.
- Island Spice "Taste of the Island" Jerk Sauce
Step By Step Instructions
Place chicken thighs in a zip top bag with jerk sauce. Remove the excess air and seal the bag. Refrigerate for 2 hours or longer, up to 8 hours.
Prepare a grill fire. Traditionally jerk chicken is grilled with pimento wood. We used hickory, since that is what we always have on hand.
Remove chicken from marinade, discarding the marinade. Place on a rimmed sheet pan, folding the sides of the chicken under the skin as pictured.
Place chicken over a 300° grill fire and cook with the grill closed for about 10 minutes.
Brush with jerk sauce , flip and brush the other side with sauce. Continue to cook another 10 - 15 minutes, until chicken reaches 165° using a digital meat thermometer.
Remove chicken from the grill and rest 5 minutes before serving.
Serve with additional sauce if desired.
How to Store and Reheat
Store leftover jerk chicken in an airtight container in the refrigerator up to 3 days.
To reheat, slice chicken and place in a skillet with additional sauce. Cook over medium heat, stirring until heated through.

Visited this Jamaican restaurant in Leavenworth, KS and also bought the Jerk Sauce on Amazon and must say this is authentic as it gets to Jamaican cuisine. It can be used for just about any meat/seafood and pairs with any side dish. Definitely a must have in any kitchen.
