Ingredients For Chile Butter Ribeyes with Shrimp:

  • Ribeye Steaks
  • Jumbo Shrimp, 16- 20 count
  • Salted Butter
  • Green Chile Powder  
  • Granulated Garlic
  • Onion Powder
  • Kosher Salt
  • Black Pepper

Where to find Green Chile Powder?

  • Green Chile Powder is our new favorite ingredient for rubs and seasoning everything from brisket to shrimp. We use Spiceology Green Chile but there are many other brands available on Amazon or possibly in your local grocery store. It adds delicious savory chile flavor without being overly spicy.

How to Grill Chile Butter Ribeyes with Shrimp:

  • Set steaks out to come to room temperature while you peel and devein the shrimp.

  • Add softened butter to a bowl with green chile powder, granulated garlic, onion powder, salt and pepper.

  • Mix well.

Pat steaks dry with paper towels and place on a baking sheet.

  • Spread about 2 teaspoons of butter on the top sides of the steaks.

  • Add about 2 tablespoons of butter the the shrimp and mix, keep shrimp chilled until the grill is ready.

  • Prepare a grill fire to about 350°- 400°.
  • Cook steaks, butter side up over indirect fire with the grill lid closed for about 5 minutes.

  • Flip the steaks and spread with additional butter. 
  • Add the shrimp to the grill.  Continue to cook with the grill closed about 5 minutes.

  • Remove shrimp to a bowl and toss with another tablespoon of butter and return to the grill.

  • Check steaks with a digital thermometer, cooking until desired doneness is reached. Depending on how thick the steaks are will determine the total cooking time. 
  • Cook shrimp until it reaches 145°.

  • Remove steaks and shrimp from the grill and allow to rest 10 minutes before serving.

Serve Chile Butter Steaks and shrimp with Chile Butter Corn on the Cob or  Grilled Corn on the Cob and Grilled Garlic Bread to complete this delicious meal.

  • Rare:  130°
  • Medium Rare: 140°
  • Medium: 155°

  • Heat Source: Hardwood Lump Charcoal 
  • Wood: Hickory or Oak 
  • Grill Temperature: 350° – 400°

How to Store and Reheat:

Store any leftovers in an airtight container in the refrigerator up to 3 days.

Slice steak before reheating. Add to a skillet coated in olive oil and cook over medium heat, stirring until heated through.

  • Cook steaks until desired doneness is reached. Depending on how thick the steaks are will determine the total cooking time. Use a digital thermometer for the best results. We pulled our steaks at about 135° for medium- rare.
  • Cook shrimp until it reaches 145°.
  • Remove steaks and shrimp from the grill and allow to rest 10 minutes before serving.
