Ingredients for Mushroom Pork Chops:

  • Boneless Pork Chops
  • Olive Oil
  • Brown Sugar
  • Granulated Garlic
  • Black Pepper
  • Kosher Salt
  • Chili Powder
  • Dried Thyme
  • Smoked Paprika
  • Butter
  • Minced Garlic
  • Fresh Mushrooms ~ white button mushrooms or cremini mushrooms
  • Fresh Thyme

How to Make Mushroom Pork Chops:

  • Prepare a grill fire to about 350° using hickory or pecan for smoke flavor.

  • Place pork chops on a baking sheet, pat dry with paper towels.
  • Spray or brush with olive oil on both sides.
  • In a small bowl, combine the brown sugar, granulated garlic, pepper, salt, chili powder, dried thyme and smoked paprika.
  • Sprinkle dry rub over both sides of the pork chops.
  • Next, start the mushrooms.

  • Slice the mushrooms into thin slices, we used a mandoline on the largest setting.
  • Melt butter in a large skillet over low heat. Add minced garlic, cooking 2- 3 minutes until garlic becomes fragrant.
  • Stir in sliced mushrooms with a wooden spoon and raise to medium heat. Continue to cook, stirring often until mushrooms are caramelized and golden brown, about 15 minutes.
  • Stir in fresh thyme. Keep mushrooms warm until ready to serve.

Grilling 4 boneless pork chops

  • Meanwhile, grill pork chops over an indirect fire with the grill closed.
  • Cook for about 5 minutes, turn pork chops and continue to cook with the lid closed another 10- 15 minutes until internal temperature of pork chops reach 145° using a digital meat thermometer.
  • The thickness of the pork chops will determine the total cooking time. We had thick pork chops and they cooked in about 20 minutes.

  • Remove pork chops to a rimmed baking sheet, rest 5 minutes.

  • Spoon mushrooms over pork chops and serve immediately.
  • Garnish with additional fresh herbs if desired.

How to Store and Reheat:

Store leftover pork chops in an airtight container in the refrigerator up to 4 days. Store mushrooms in an airtight container up to 2 days in the refrigerator.

Slice pork chops and add to a skillet with olive oil and mushrooms to reheat over medium heat. Stir often until heated through.

TIPS FOR GRILLING PORK CHOPS:

The key to juicy and tender pork chops is using a digital meat thermometer. Pork is cooked through at 145°, so pork chops can be pulled from the grill at about 140° and they should come up to temperature if you let them rest for about 5 – 10 minutes under a foil tent. The longer you cook pork chops, the drier and tougher they will become.

We used loin chops for this recipe, bone-in pork chops work too and can be slightly more flavorful but might take a bit longer to cook.
