Grilled Caprese Burgers
Grilled Caprese Burgers are full of delicious Italian flavors and a surefire hit for any cookout or weeknight dinner. All beef burgers topped with mozzarella cheese, fresh tomatoes and basil. Add pesto mayo and lettuce to buttery toasted buns for a tasty burger that is sure to please.

- Ground Beef ~ We used 70/30 for this recipe, 80/20 is also a great choice.
- Steak Rub ~ Or use your favorite all purpose seasoning blend.
- Fresh Mozzarella Cheese ~ Usually found in the deli section.
- Tomatoes ~ Sliced or diced, we used romas.
- Fresh Basil
- Pesto ~ Homemade or store bought.
- Mayonnaise
- Lettuce
- Burger Buns
- Butter

🔥 Step by Step Instructions:
- Prepare a grill fire. We grilled these burgers on our Big Green Egg ceramic grill with lump charcoal and pecan chunks for smoke flavor.
- Make thin burger patties about 1/3 pound each.
- Place the burger patties onto the grill.
- Season the burgers and cook about 5 minutes with the grill closed.
- Flip the burgers and season once more. Continue to cook until cooked through and burger patties reach 165° internal temperature using a digital meat thermometer.
6. Shred the lettuce, dice or slice the tomatoes.
7. Butter and lightly toast the buns.
8. Top the burger patties with slices of mozzarella cheese. You can do this on the grill or under the broiler.
9. Mix mayonnaise with pesto.
10. Build the burgers with pesto mayo, lettuce, burger patties, tomato and basil.
11. Serve immediately.
🔥 How to Store and Reheat Burger Patties:
Store grilled burger patties in a zip to bag in the refrigerator up to 3 days.
Reheat in a covered skillet with 1 tablespoon water over medium heat. Flip patties after 2- 3 minutes and continue to cook until heated through.

- Make patties into 1/3 pound, thin patties.
- Cook burgers on a hot grill, seasoning with steak rub with the grill closed for 5 minutes.
- Flip the burgers and season again with rub. Continue to cook until burgers are cooked through to 165° using a digital meat thermometer.
- Top with sliced cheese and melt on the grill or under broiler.
- Butter and toast the burger buns.
- Mix mayonnaise with pesto and spread onto the toasted buns.
- Layer with shredded lettuce, burger patties, tomatoes and basil.
- Serve immediately.
