Ingredients for Mini Cheeseburgers Recipe

  • Ground Beef – Use lean ground beef 80/20 or 90/10.
  • Large Egg – The egg helps hold the mini burger patties together and also adds moisture.
  • Steak Rub – This is our favorite all-purpose seasoning, it adds all the flavor you need to the burgers.
  • Dried Onion Flakes – adds more flavor to the burger patties.
  • Sweet & Tangy BBQ Sauce
  • American Cheese – Pepper jack or Swiss slices are also great options.
  • Pickle Slices – Dill slices or bread and butter slices are both delicious. Drain and pat dry with paper towels before adding to the appetizer picks.
  • Garlic Bread Bites – These mini-size garlic bread rolls are the perfect mini burger bun for these appetizers. Pop them on the end or slice in half for an actual mini burger bun. If you aren’t into making homemade bread, pizza dough or biscuit dough works too.
  • Burger Sauce – Burger sauce adds classic burger flavors. Mix mayo and bbq sauce for a super easy version.

Step-by-Step Directions for Cheeseburger Appetizers

  1. Make the Burger Patties: Mix ground beef in a medium size bowl with egg, steak rub and dried onion flakes.
  2. Make into tablespoon size meatballs and place on a grill pan.
  3. Use your thumb to flatten the meatballs into burger patties with and indentation in the center.

  1. Grill the Burgers: Grill over indirect fire with the grill lid closed for 8 – 10 minutes.
  2. Brush with bbq sauce and close the lid, cook for another 3- 5 minutes or until internal temperature of the burger patties reaches 165° using a digital meat thermometer.
  3. Remove from grill.

  1. Prep the Toppings: Drain and pat the pickles dry with paper towels. Cut each cheese slice into 6 pieces.

  1. Make the Mini Cheeseburgers: Using appetizer picks, thread on pickles, quarter, cheese slices, mini bbq burger patties and then the garlic bread bites.
  2. Serve: Place mini cheeseburgers on a serving platter with burger sauce or bbq sauce and serve hot or at room temperature.

Recipe Notes and Variations for Mini Cheeseburger Appetizers

  • For the Garlic Bread Bites: We used a homemade dough for our appetizers. Store bought pizza dough or biscuit dough would also work. You can also slice the garlic bread bites in half to create a top and bottom bun if desired. Then layer the burger patties, cheese and pickles in between and thread onto an appetizer pick.
  • More Topping Ideas: Leaf lettuce, red onion slices, cherry tomatoes and tater tots are all easy additions to the mini cheeseburgers.
  • Storage: Store leftover mini cheeseburgers in an airtight container in the refrigerator up to 2 days.
  • Reheat: Remove from appetizer picks and place bread and cheeseburgers on a baking sheet, cook for 8- 10 minutes at 350° or until heated through.
