Ingredients Needed for O’Brien Potatoes Recipe

  • Bell peppers: green bell pepper, yellow bell pepper or red bell pepper
  • Onions
  • Granulated garlic
  • Kosher salt
  • Smoked paprika
  • Black pepper
  • Beef tallow or olive oil

Step-by-Step Instructions

  1. Peel the potatoes, cut into small cubes, rinse well and thoroughly dry.
  2. Dice bell peppers and onions into evenly sized pieces.

  1. Heat your Blackstone griddle to medium-high heat and coat generously with beef tallow or cooking oil.
  2. Add potatoes to the griddle, spreading them into a single layer to ensure crispiness.
  3. Add bell peppers and onions to the griddle, mixing with potatoes.
  4. Season generously with granulated garlic, kosher salt, smoked paprika and black pepper.
  5. Continue cooking, stirring occasionally until potatoes are crispy and vegetables are tender.

  1. Remove to a pan or platter. Serve immediately and enjoy the delicious flavors hot off the griddle.
