Pellet Grill Twice Baked Potatoes
Pellet Grill Twice Baked Potatoes make a great side dish for any holiday dinner or for entertaining guests. Russet potatoes stuffed that are extra creamy with three kinds of cheese and bacon.
Our favorite holiday dinner is Prime Rib Roast and Twice Baked Potatoes and everyone is always excited for Christmas dinner.
As often as we can, we cook the entire meal on the grill. It’s especially great for holiday entertaining and it’s easy to cook for a crowd. Grilled twice baked potatoes are always a hit for celebration dinners or any grilled steak.
Ingredients Needed
- Russet Baking Potatoes
- Butter
- Heavy Cream
- Sour Cream
- Colby Jack Cheese
- Smoked Gouda Cheese
- Parmesan Cheese
- Fresh Garlic
- Kosher Salt
- Black Pepper
- Cooked Bacon
Step By Step Directions
- Scrub russet potatoes and prick with a fork.
- Cook on a pellet grill at 375° – 400° for 1 to 1 1/2 hours or until potatoes are tender. You can use a digital thermometer, cooking to about 200°.
- Remove potatoes from the grill and cool slightly.
- Cut potatoes in half lengthwise.
- Scoop the inside of the potatoes to a mixer bowl, leaving the skin intact.
- Add butter, heavy cream, sour cream, fresh garlic, salt and pepper to the potatoes. Next, add the cheeses along with half of the bacon finely chopped.
- Mix on low speed with a wire whisk attachment of a mixer until mixture is just combined. Raise to medium speed and beat until smooth.
- Place potatoes on a sheet pan.
- Fill potato skins with potato filling. If you have extra filling, place in an oven safe bowl and bake alongside of the potatoes or refrigerate to enjoy later.
- Sprinkle with a little more cheese and the remaining bacon.
- Return to the pellet grill, cooking for 30 minutes with the grill closed.
- Remove from grill and serve immediately.
How to Store and Reheat
Store leftover twice baked potatoes in an airtight container in the refrigerator up to 4 days.
Reheat in a 350° oven for 15- 20 minutes.

- 1 cup grated colby jack cheese divided
- ½ cup grated smoked gouda
- ½ cup finely grated Parmesan
- 6 slices cooked bacon
Instructions

- Return to the pellet grill, cooking for 30 minutes or until potatoes are heated through.
- Remove from grill and serve immediately.
