Ingredients

  • 4 medium Russet Potatoes peeled, diced, rinsed and dried
  • 2 bell peppers diced
  • 2 medium onions diced
  • 1 tablespoon granulated garlic
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ cup beef tallow or cooking oil

Instructions

  • Heat your Blackstone griddle to medium-high heat and coat generously with beef tallow or cooking oil.
  • Add potatoes to the griddle, spreading them into a single layer to ensure crispiness.
  • Add bell peppers and onions to the griddle, mixing with potatoes.
  • Season generously with granulated garlic, kosher salt, smoked paprika and black pepper.
  • Continue cooking, stirring occasionally until potatoes are crispy and vegetables are tender.
  • Remove to a serving platter.

Notes

Cast Iron Skillet: If you don't have a Blackstone, use a blackstone griddle, a cast iron skillet works great for this recipe.
Storage: Keep leftovers in an airtight container in the refrigerator 3-4 days. 
Reheat: Cook in a skillet coated lightly with tallow or cooking oil over medium-high heat, stirring until heated through.
