Ingredients
- 2 cans black eyed peas rinsed and drained
- 1 can black beans rinsed and drained
- 4 tomatoes diced – seeds and juice discarded
- 1 cup bell pepper diced
- 1 cup red onion diced
- 1 jalapeno diced – seeds removed
- ½ cup fresh cilantro chopped
- 1 cup Italian Dressing homemade or your favorite brand
- tortilla chips for serving
Instructions
- Add rinsed and drained black eyed peas and black beans to a large bowl.
- Add tomatoes, bell peppers, onion, jalapeno and cilantro to the beans.
- Top with Italian dressing and mix well.
- Cover and refrigerate 30 minutes or until ready to serve.
