- 2 cans black eyed peas rinsed and drained
- 1 can black beans rinsed and drained
- 4 tomatoes diced - seeds and juice discarded
- 1 cup bell pepper diced
- 1 cup red onion diced
- 1 jalapeno diced - seeds removed
- ½ cup fresh cilantro chopped
- 1 cup Italian Dressing homemade or your favorite brand
- tortilla chips for serving
Add rinsed and drained black eyed peas and black beans to a large bowl.
Add tomatoes, bell peppers, onion, jalapeno and cilantro to the beans.
Top with Italian dressing and mix well.
Cover and refrigerate 30 minutes or until ready to serve.
Serve with tortilla chips or as a topping for taco salad, nachos or grilled meats.
Store in an airtight container in the refrigerator up to 4 days.
