Texas Caviar

Texas Caviar is a fresh and flavorful dip made with black-eyed peas, black beans, veggies, and zesty Italian dressing. Perfect for cookouts, tailgates, and summer parties.

Ingredients

  • 2 cans black eyed peas rinsed and drained
  • 1 can black beans rinsed and drained
  • 4 tomatoes diced - seeds and juice discarded
  • 1 cup bell pepper diced
  • 1 cup red onion diced
  • 1 jalapeno diced - seeds removed
  • ½ cup fresh cilantro chopped
  • 1 cup Italian Dressing homemade or your favorite brand
  • tortilla chips for serving

Instructions

  • Add rinsed and drained black eyed peas and black beans to a large bowl.
  • Add tomatoes, bell peppers, onion, jalapeno and cilantro to the beans.
  • Top with Italian dressing and mix well.
  • Cover and refrigerate 30 minutes or until ready to serve.
  • Serve with tortilla chips or as a topping for taco salad, nachos or grilled meats.

Notes

Store in an airtight container in the refrigerator up to 4 days.
