Foil packet potatoes  are easy to make on the grill alongside grilled steaks, pork chops or chicken.

Ingredients for Garlic Butter Potatoes:

salt, pepper, butter, thyme, garlic, dill weed

  • Baby Potatoes
  • Onion
  • Butter
  • Granulated Garlic
  • Dried Dill Weed
  • Dried Thyme
  • Kosher Salt
  • Black Pepper

How to Grill Foil Packet Garlic Butter Potatoes:

  • Wash potatoes and dry well. Cut larger potatoes into halves or quarters.
  • Cut onion into bite size pieces.

  • Add softened butter with garlic, dill, thyme, salt and pepper to a bowl.

  • Mix well with a fork.

  • Using a large piece of heavy duty foil, place potatoes in the center. 
  • Pour butter mixture over the top.

  • Fold foil into a sealed packet that will fit onto the grill.

  • Cook potatoes over indirect grill fire at about 350° for 1 hour. 
  • If you would like to test the potatoes for doneness, use a digital thermometer and look for a temperature of 210°.

  • Remove to a baking sheet. Carefully open the foil, watching for steam. 
  • Toss potatoes with butter and serve immediately.

How to Store and Reheat:

Store leftover potatoes in an airtight container in the refrigerator for up to 4 days. 

Reheat in a skillet with additional butter or olive oil over medium heat, stirring until heated through.

Ingredients

  • 2 pounds baby potatoes
  • 1 cup diced onion
  • ½ cup butter softened
  • 2 teaspoons granulated garlic
  • 2 teaspoons dried dill
  • 2 teaspoons dried thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Instructions

  • Wash potatoes well and pat dry.
  • Slice larger potatoes in half or into quarters.
  • In a small bowl, mix butter with garlic, dill, thyme, salt and pepper.
  • Use a large piece of heavy foil and pour potatoes into the center.
  • Top with garlic butter.
  • Fold the foil, creating a sealed packet.
  • Cook potatoes over 350° indirect fire with the grill closed for 1 hour or until potatoes reach 210° using a digital thermometer.
  • Remove from grill to a sheet pan.
  • Carefully open the foil, watch for steam. Toss potatoes with butter and serve immediately.

Notes

Store leftover potatoes in an airtight container in the refrigerator up to 4 days.
Reheat potatoes in a skillet with additional butter or olive oil over medium heat, stirring until heated through.

  1. Absolutely the best potatoes ever. I cut the recipe in half. I wish I had taken a picture. Simple to make. My husband grilled them. I did cut my potatoes in half. In a bowl I put the herbs and melted butter, stir everything then added my potatoes and mixed everything to coat potatoes. Add to foil. Gosh, they are fantastic
