Smoked Pork Shoulder with brown sugar garlic rub is a flavorful and delicious way to make tender and juicy pork roast that is perfect for barbecue sandwiches!
Pork Shoulder or Pork Butt generally comes from the grocery store in about 8 pound roasts. We love to use it to make homemade sausage and it also makes the best barbecue sandwiches. We cut one of our roasts down to about a 3 pound roast before smoking.
If you would like to smoke a whole pork shoulder, you can double the rub recipe and adjust the cooking time for this recipe to about 1 hour per pound.
How to Make Smoked Pork Shoulder:
Mix rub together by combining:
- Brown Sugar
- Granulated Garlic
- Smoked Paprika
- Kosher Salt
- Black Pepper
- Dry Mustard
- Red Pepper Flakes
- Pat pork shoulder dry with paper towels.
- Mix olive oil with Worcestershire sauce and rub all over pork.
- Sprinkle with rub on all sides, pressing into roast.
- Prepare a grill fire to 300° using pecan or hickory for smoke flavor.
- Place pork shoulder over indirect heat and close the grill lid. Cook for 3 hours or until internal temperature reaches 180°.
- At 145° the pork is cooked through but will become more tender from 180 - 190°.
- Remove from grill and allow to rest 10 minutes.
- Slice or shred for sandwiches.
- Toss pork with barbecue sauce if desired.
- Serve on homemade rolls with coleslaw.
How to Store and Reheat:
Store pork in an airtight container in refrigerator up to 3 days. To reheat, place in a skillet with a few tablespoons of water or barbecue sauce. Cook over medium heat, stirring constantly, about 5 minutes.

Ingredients
- 3 pound pork shoulder
- 2 tablespoons olive oil
- 1 tablespoon Worcestershire Sauce
- 4 tablespoons brown sugar
- 2 tablespoons granulated garlic
- 1 tablespoon smoked paprika
- 1 tablespoon kosher salt
- 1 tablespoon black pepper
- 1 teaspoon dry mustard
For Sandwiches
Instructions
Prepare grill with a 300° fire with pecan or hickory for smoke flavor.
Pat pork shoulder dry with paper towels.
Mix olive oil and Worcestershire sauce together and rub all over pork.
In a small bowl, combine brown sugar, garlic, smoked paprika, salt, pepper and dry mustard.
Sprinkle rub all over pork shoulder, pressing into the meat.
Place pork shoulder over indirect heat and cook with the lid closed for 3 hours or until internal temperature reaches 180°.
Remove from grill or smoker and allow to rest for 10 minutes before slicing or shredding.
Notes
Store leftover smoked pork in an airtight container in refrigerator up to 3 days.
To smoke a full pork shoulder (about 8 pounds) double the rub recipe and smoke for 1 hour per pound.
