Ingredients Needed:
For the Pork Chops:
- Boneless Pork Chops
- Olive Oil
- Pork Rub
For the Peach Salsa:
- Peaches
- Tomatoes
- Bell Peppers
- Lime Juice
- Cilantro
- Sweet Onions
- Kosher Salt
- Granulated Garlic
How to Make Peach Salsa Pork Chops:
- Prepare a grill fire to about 300° on a pellet grill or charcoal grill.
- Pat pork chops dry with paper towels.
- Drizzle with olive oil and coat with dry rub on both sides.
Make the Salsa:
Peel and dice the peaches.
Dice the tomatoes, onions and bell peppers, removing the seeds and membranes and place in a bowl.
- Squeeze lime juice over the peaches and vegetables.
- Season with salt and garlic. Add the chopped cilantro.
- Stir together. Set aside or cover and refrigerate until grilling pork chops.
Grill the Pork Chops:
- Place the pork chops over indirect fire and cook with the grill closed about 10 minutes.
- Flip the pork chops and continue to cook 5 minutes.
- Top the pork chops with a spoonful of peach salsa.
- Close the grill and continue to cook until pork chops reach 145° using a digital meat thermometer.
- Remove from the grill and rest for 5 minutes before serving.
- Serve with additional peach salsa if desired.
How to Store and Reheat:
Store leftover peach salsa in an air tight container in the refrigerator up to 3 days.
Pork chops can be wrapped in plastic wrap and stored in the refrigerator up to 3 days. Slice and reheat in a skillet coated in olive oil over medium heat, stirring until heated through.
