Ingredients for Grilled Apple Cider Roast Beef:

Apple Cider Marinade, jug of apple cider and roast beef on a plate

  • 3- 4 pound roast beef (pikes peak roast, chuck roast or rump roast)
  • Apple Cider
  • Brown Sugar
  • Granulated Garlic
  • Kosher Salt
  • Dry Mustard

How to Grill Apple Cider Roast Beef:

Apple Cider Marinade for Roast Beef

Prepare apple cider marinade and allow to cool to room temperature.

Injecting apple cider marinade into roast beef

Use an injector and inject about half of  the marinade into the roast.

Place in a zip top baggie and pour remaining marinade over roast. Seal and place in refrigerator for 2 hours.

Prepare a grill fire to about 350° with hickory wood for smoke flavor. 

Remove roast from marinade and place over indirect fire.

Cook with the lid closed until internal temperature reaches 150°, about 1 hour.

Remove from grill and wrap in foil. Return to the grill and continue to cook with the lid closed until internal temperature reaches 190°- 200°.

Allow roast to rest for about 15 minutes before slicing.

How to Store and Reheat:

Store leftover roast beef wrapped in plastic wrap or foil for up to 4 days. 

Reheat in a skillet with a few tablespoons of beef broth or water, stirring until heated through.

Ingredients

  • 2 cups apple cider
  • 6 tablespoons brown sugar
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • 1//2 teaspoon dry mustard

Instructions

  • Pour apple cider into a small pan.
  • Whisk in brown sugar, garlic, salt and dry mustard.
  • Cook over medium heat, stirring occasionally bringing to a boil. Cook 5 minutes. Remove from heat and transfer to a mason jar. Cool before using as marinade.
