Since the first time we tried grilling roast beef, we have not made another in the slow cooker! The flavor and texture you get from grilling is beyond delicious.
How to Grill a Brown Sugar Rump Roast:
- Set rump roast out to come to room temperature about an hour before grilling.
- Pat dry with paper towels and drizzle with olive oil.
- Sprinkle rub over all sides of roast. Press rub into roast.
- Prepare the grill fire to about 300° with hickory or oak for smoke flavor.
- Place roast over indirect fire and cook with the lid closed for about 1 1/2 hours or until internal temperature reaches 135° for a medium roast.
- Remove from grill and allow to rest 15 minutes before slicing, internal temperature will come up 5 -10° while resting.
TEMPERATURE FOR ROAST BEEF:
- 125° Rare
- 135° Medium Rare
- 145° Medium
- 155° Medium Well
- 165° Well Done
How Long to Cook a Rump Roast:
We generally cook our roasts around 300° and figure about 3o minutes per pound.
Roast can be sliced and served immediately. To get deli thin slices, wrap rump roast in several layers of plastic wrap and one layer of foil. Refrigerate over night.
Use a sharp knife or meat slicer for the thinnest slices.
I prefer to slice as needed for the roast to stay the freshest tasting but you can wrap slices tightly in several layers of plastic wrap and store in refrigerator up to 4 days.

Brown Sugar Garlic Rump Roast
Ingredients
- 3-4 pound rump roast
- 2 tablespoons olive oil
- 4 tablespoons brown sugar
- 2 tablespoons granulated garlic
- 1 tablespoon smoked paprika
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon dry mustard
- ¼ teaspoon red pepper flakes
for sandwiches
- sesame seed buns
- horseradish sauce
- sliced tomatoes
- 2 onions sliced and caramelized
Instructions
- Set roast out on the counter about 1 hour before grilling. Pat dry with paper towels and lay on a baking sheet.
- Drizzle with olive oil, rubbing on all sides.
- Mix brown sugar, garlic, smoked paprika, kosher salt, pepper, dry mustard and red pepper flakes.
- Cover entire roast with dry rub, pressing it in to coat.
- Prepare a grill fire to 300° with hickory or oak for smoke flavor.
- Place roast over indirect fire and cook with the grill lid closed for 1 1/2 hours or until roast reaches desired doneness. Use a digital thermometer for accurate results. For a medium roast, cook to 135°.
- Remove from grill and allow to rest 15 minutes before slicing.
- To make sandwiches, layer buns with horseradish sauce, tomato, sliced roast beef and top with caramelized onions.
