Garlic Rosemary Strip Steaks
Garlic Rosemary Strip Steaks are great for a celebration dinner and easy enough for any night of the week. Add a decadent steak dinner to your grilling menu this week.
Garlic & Cracked Pepper Steaks are one of our favorites for grilled strip steak, add some mashed potatoes or Loaded Baked Potatoes and Grilled Corn on the Cob for a complete dinner.
Typically strip steaks are cut on the thin side at the grocery store so for this recipe, we bought a whole strip loin and sliced it into thicker steaks, reserving about half or the roast in one piece for the holidays. You can also ask the butcher to slice a few steaks to your desired thickness.

It’s easy to overcook a thin strip steak, so that’s one of the reasons we like to go with a thicker steak. Using a digital meat thermometer is key to the perfectly grilled strip steak.
Ingredients Needed
- New York Strip Steaks
- Olive Oil
- Garlic and Herb Rub
Step By Step Directions
- Prepare a grill fire using pecan or hickory for smoke flavor. We are cooking on a Big Green Egg for this recipe with lump charcoal.
- Pat steaks dry with paper towels.
- Coat with olive oil and season with Garlic and Herb Rub on both sides.
- Sear steaks for 5 minutes with the grill closed.
- Flip the steaks and continue to cook another 5- 8 minutes until desired doneness is reaches. We cooked ours to about 125°.
Cooking Temperature for Strip Steaks
- Rare: 130°
- Medium Rare: 140°
- Medium: 155°
- Remove steaks from the grill and allow to rest about 5-10 minutes before serving.

Ingredients
- 3- 4 thick cut NY Strip Steaks
- 2 tablespoons olive oil
- 3 tablespoons Garlic and Herb Rub
Instructions
- Prepare a grill fire to 350° with pecan or hickory for smoke flavor. We are using the Big Green Egg ceramic grill with lump charcoal and pecan chunks.
- Pat the steaks dry with paper towels, coat with olive oil and sprinkle dry rub over both sides.
- Cook steaks over direct fire with the grill closed for 5 minutes.
- Turn the steaks and continue to cook until desired doneness, about 3- 5 minutes more.
- Remove steaks from grill and rest 5- 10 minutes before serving.
