Raspberry Chipotle Meatballs
Raspberry Chipotle Meatballs are made with ground beef, peppers and onions and glazed with a tasty raspberry chipotle sauce. A great party appetizer or main dish.

Grilled meatballs are one of our favorite appetizers and they are so easy to make. Serve them over rice pilaf or add them to your next holiday appetizer menu.
Ingredients Needed for Raspberry Chipotle Meatballs
- Onion: diced
- Bell Pepper: diced
- Eggs: Beaten
- Ground Beef: 80/20
- Granulated Garlic
- Coarse Ground Pepper
- Kosher Salt
- Out Grilling Sweet BBQ Rub or Steak Seasoning
- Raspberry Preserves
- Chipotle Sauce
- Apple Cider Vinegar
How to Grill Raspberry Chipotle Meatballs Recipe

- Make the raspberry chipotle glaze by mixing raspberry preserves, chipotle sauce, apple cider vinegar, granulated garlic and salt together in a bowl. Set aside.

- Add onions and peppers to a large mixing bowl with the ground beef.
- Add eggs and seasonings to the meat mixture.
- Mix together with clean hands until well combined.

- Scoop meatballs with a 1 1/2 tablespoon scoop and place on a rimmed baking sheet. Sprinkle with Rub.

- Place meatballs over indirect fire. Cook with the grill closed 5 minutes.
- Turn the meatballs and brush with chipotle sauce.
- Continue cooking meatballs, turning and brushing with additional sauce every 5 minutes until meatballs reach 165° using a digital meat thermometer.

- Remove to a serving platter and serve hot or at room temperature.
Recipe Notes
- Make Ahead: Meatballs can be made ahead to the point of shaping. Cover and refrigerate up to 1 day. Cook according to directions.
- How to Freeze Meatballs: Place meatballs on a lined baking sheet in a single layer for 4 hours. Remove from baking sheet and place in a ziploc freezer bag and freeze up to 3 months. Cook from frozen adding 5 – 10 minutes to cooking time.

Raspberry Chipotle Sauce
- 12 ounces Raspberry Preserves
- 6 tablespoons chipotle sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon granulated garlic
- 1 teaspoon kosher salt
- 1 ½ pounds ground beef 80/20
- 1 ½ cups diced onion
- 1 cup diced bell pepper
- 3 eggs beaten
- 1 ½ tablespoons granulated garlic
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 tablespoon Out Grilling Sweet BBQ Rub or Favorite Grilling Rub
Instructions
- Prepare a grill fire to 350° using hickory for smoke flavor.
