Ingredients for Pulled Pork Totchos

Totchos:
Tater tots
Vegetable oil (for frying or air frying)
Pulled Pork (on the big green egg is our favorite method)

Queso:
Onion, diced
Jalapeño, diced
Garlic, minced
Bacon grease
Velveeta cheese, cubed
Heavy cream
Milk
Ground cumin
Salt

Toppings:
Salsa fresca
Sour cream
Fresh cilantro

How to Make Pulled Pork Totchos

  1. Fry the Tater Tots
    Heat vegetable oil to 375°F in a deep fryer or heavy skillet. Fry tater tots in batches until golden brown and crispy. Drain on a paper towel-lined plate and sprinkle with a little Out Grilling Sweet BBQ Rub for extra flavor.

  1. Warm the Pulled Pork
    If using leftover smoked pork butt, warm it in a skillet over medium heat. Sprinkle with additional Sweet BBQ Rub to bring the flavor back to life.
  1. Make the Queso
    Using a non-stick pan, heat bacon grease over medium-high heat.
    Sauté onion, jalapeño, and garlic until softened.

Stir in heavy cream and milk, lowering heat to medium-low. Cut Velvetta into chunks, add to the pan, stirring until melted and smooth.


Season with cumin and salt, mixing well.

Ingredients

Queso

  • 1 onion diced
  • 1 jalapeno diced, seeds removed
  • 2 cloves garlic minced
  • 1 tablespoon bacon grease or olive oil
  • ½ cup heavy cream
  • ½ cup milk
  • 1 pound velveeta
  • ½ teaspoon ground cumin
  • ½ teaspoon kosher salt

  • Heat oil in a dutch oven or large cast iron skillet to 375° using a fry thermometer.
  • Cook tater tots in batches until golden brown and crispy. Drain on a paper towel lined wire rack.
  • Heat pulled pork in a skillet, sprinkling with Out Grilling Sweet BBQ Rub, until pork starts to crisp. Keep warm.

For Queso

  • In a non-stick pan, over medium-high heat, add bacon grease.
  • Add onion, jalapeno and garlic, cooking until onions start to caramelize.
  • Pour in heavy cream and milk, lowering heat to medium-low.
  • Cut Velveeta into chunks and add to the pan, stirring until melted.
