Homemade pizza is actually pretty simple to make and a great way to enjoy pretty much any meat that  you have grilled. Finish off pizza night with an easy Apple Pie Pizza on the grill!

Ingredients for Brisket Pizza:

  • Pizza Dough ~ Use our easy pizza dough recipe or store bought.
  • Pizza Sauce ~ We are making our own with tomato sauce, olive oil, onions, bell peppers, carrot, brown sugar, garlic and Italian Spices.
  • Smoked Brisket ~ Cooking a big brisket over the weekend provides quite a few meals for the week and if you are tired of sandwiches, add it to pizza!
  • Mozzarella Cheese ~ Mozzarella is the classic pizza cheese but any Italian blend will be tasty.
  • Green Onions ~ We are just using the green tops for this since the sauce has onions too. They add color and a burst of fresh flavor.
  • Sliced Tomatoes ~ Fresh tomatoes pick up a hint of smoky flavor on top of the pizza and make this pizza a show-stopper. We just used some greenhouse tomatoes from the grocery store for this but as soon as summer rolls around, our garden fresh Roma tomatoes are going to be the answer.
  • Cornmeal ~ To sprinkle on the pizza peel and pizza stone.

How to Grill Brisket Pizza

Make the Sauce

  1. In a skillet, add olive oil, diced onion, diced bell peppers and a shredded carrots. Cook over medium heat, stirring often until vegetables are softened.

  1. Stir in tomato sauce, brown sugar, basil, thyme, oregano, salt and pepper.
  2. Cook for 5 minutes, remove from heat and set aside.

For the Pizza

  1. Prepare a grill fire to about 450° with a pizza stone and hickory for smoke flavor.

  1. Make the pizza dough.
  2. Roll pizza dough into about a 10- 12 inch circle.
  3. Fold the edges over to make the sides.
  4. Sprinkle a pizza peel  or pan with cornmeal.
  5. Carefully place the dough over the cornmeal.

  1. Spread pizza sauce over dough in a thin, even layer.

  1. Top with mozzarella cheese.

  1. Next, add the thin sliced tomatoes and green onions.

  1. Sprinkle the pizza stone with cornmeal.
  2. Slide the pizza onto the stone and close the grill lid.
  3. Lower grill to about 350° and cook for about 3- 5 minutes.
  4. Use a large spatula to turn pizza a 1/4 turn and continue to cook with the grill closed.

  1. Continue to rotate pizza about every 3- 5 minutes, cooking until pizza is well  browned on the bottom and the cheese starts to bubble. Total cooking time should be about 15- 20 minutes.

  1. Remove from grill and cool 5 minutes before slicing.

How to Store and Reheat

  • Store cooled pizza slices in a zip top bag up to 3 days.
  • Reheat on a baking sheet in a 350° oven or toaster oven. An air fryer is also great for reheating pizza at 350° for about 3- 5 minutes.

For the Pizza Sauce:

  • 1 tablespoon granulated garlic

  • 1 tablespoon dried basil

  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground pepper

Pizza Toppings

  • 3 cups chopped smoked brisket
  • 3 cups shredded mozzarella cheese
  • 3 small tomatoes sliced thin
  • ½ cup chopped green onions green parts only

This recipe makes three 10- 12 inch thin crust pizzas. Adjust recipe as needed.
