  • Stir in tomato sauce.
  • Mix the spices together with brown sugar, salt and red pepper.
  • Mix into tomato mixture, cook for 5 minutes, stirring often. Set aside and cool slightly. Pizza sauce can be made up to 1 week in advance and stored in an airtight container in the refrigerator.

pizza dough on a pizza peel

  • Roll out pizza dough, forming an 10 -12 inch circle. Fold in the outer edge.
  • Sprinkle pizza peel or baking sheet (without a rim) with cornmeal.
  • Place dough onto peel.

pizza with toppings - not baked

  • Add sliced smoked sausage, tomatoes, peppers and onions.
  • Top with mozzarella cheese.

pizza on a grill with pizza stone

  • Prepare a grill fire to about 450° with a pizza stone and hickory for smoke flavor.
  • Sprinkle the pizza stone with cornmeal.
  • Slide the pizza onto the stone and close the grill lid.
  • Lower grill to about 350° and cook for about 3- 5 minutes.
  • Use a large spatula to turn pizza a ¼ turn and continue to cook with the grill closed.
  • Continue to rotate pizza about every 3- 5 minutes, cooking until pizza is well  browned on the bottom and the cheese starts to bubble. Total cooking time should be about 15- 20 minutes.
  • Remove from grill and cool about 5 minutes before slicing.
