Grilled Pizza is one of our favorites for a quick weeknight dinners. Everything can be prepped ahead and it’s a great way to use leftover veggies if you have them on hand. If you are a fan of Italian sausage, you’ll also love these Sausage Stuffed Poblano Peppers

Ingredients Needed:

skillet of peppers & onions, bowl of mushrooms, pizza dough, pizza sauce, shredded cheese

  • Pizza Dough: Homemade or store bought
  • Cornmeal
  • Pizza Sauce: tomato sauce, brown sugar, salt, granulated garlic, smoked paprika, thyme, oregano, basil, ground rosemary.
  • Italian Sausage
  • Olive Oil
  • Mushrooms
  • Bell Peppers
  • Onions
  • Kosher Salt
    Black Pepper
  • Mozzarella Cheese

How to Grill Sausage Mushroom Pizza:

  • Prepare the toppings by cooking sausage in a skillet over medium heat, crumbling as it browns on all sides. Drain and set aside.
  • Cook sliced bell peppers and onions in another skillet with olive oil over medium heat. Stir often until onions start to caramelize. Remove from heat and set aside.
  • Cook sliced mushrooms in another skillet with olive oil, salt and pepper over medium heat. Stir often, cooking until mushrooms are softened and start to brown. Remove from heat and set aside.
  • Stir the pizza sauce together in a bowl. 
  • Prepare a grill fire using a pizza stone to 450°.
  • Make the pizza dough and divide into 3 equal pieces. 
  • Roll each pizza dough into a 8 inch circle.

  • Sprinkle a pizza peel well with cornmeal.
  • Place the dough over the cornmeal. Press the edges of the dough to form an edge.
  • Add pizza sauce, spreading evenly to the edges.
  • Sprinkle with mozzarella cheese.
  • Add sausage, onions, peppers and mushrooms.

  • Top with more mozzarella cheese.
  • Sprinkle pizza stone with cornmeal.

  • Slide the pizza onto the pizza stone and close the lid. Lower grill temperature to around 350°.

  • Continue to rotate pizza about every 3- 5 minutes, cooking until pizza is well  browned on the bottom and the cheese starts to bubble. Total cooking time should be about 15- 20 minutes.

  • Remove from grill and cool about 5 minutes before slicing.
  • Repeat with remaining ingredients to create 2- 3 pizzas.

  • 1 pound ground sweet Italian sausage
  • ¼ cup olive oil divided
  • 8 ounces mushrooms sliced
  • 1 large onion sliced thin

  • 4 cups shredded mozzarella cheese

  1. You said you could prep ahead. Can you make these pizzas and then freeze them to eat later? If so, How do you recommend freezing them and then reheating when ready to eat?

    I have a pizza oven on my grill and have made pizzas before. They are so delicious coming off the grill!

    1. Hi Kevin,
      You can prep ahead -I was thinking cooking the toppings ahead and having them ready to build the pizzas. I do that to save time but you can prepare the pizzas and freeze them.
      It is best to par-bake the crust for about 5 minutes before adding the toppings. After adding the toppings, place the pizza on a parchment lined baking sheet and freeze for about 1-2 hours. Remove from the freezer and wrap the pizza in 2 layers of plastic wrap and then a layer of foil. Freeze up to 3 months. Grill or bake just like you would a frozen pizza.
